The Globalization of Chinese Food ANTHROPOLOGY OF ASIA SERIES Series Editor: Grant Evans, University ofHong Kong Asia today is one ofthe most dynamic regions ofthe world. The previously predominant image of 'timeless peasants' has given way to the image of fast-paced business people, mass consumerism and high-rise urban conglomerations. Yet much discourse remains entrenched in the polarities of 'East vs. West', 'Tradition vs. Change'. This series hopes to provide a forum for anthropological studies which break with such polarities. It will publish titles dealing with cosmopolitanism, cultural identity, representa tions, arts and performance. • Sweet Baby Ray's Barbecue Restaurant Offers a Distinctive Vision
Sweet Baby Ray’s restaurant, general release, page 1 Media Contact: Kurman Communications, Inc. (312) 651-9000 Stephanie DeMeester / Catherine Patterson [email protected] / [email protected] FOR IMMEDIATE RELEASE Sweet Baby Ray’s Barbecue Restaurant offers a distinctive vision of authentic high-quality Chicago-style barbecue An unbridled barbecue passion and a unique team of culinary professionals create the definitive Chicago rendition Elk Grove Village, Ill. (May 2008)—For barbecue lovers, barbecue isn’t simply a cuisine, it’s a passion. No one is more passionate about great barbecue than Dave (aka Sweet Baby Ray) Raymond and his partner, Mike O’Brien, owners of Sweet Baby Ray’s Restaurant in Elk Grove Village (800 E. Higgins Rd., Elk Grove Village, Ill.; 847-437-9555). “Barbecue is about having fun,” says Dave. “If you’re not having fun, you’re not having great barbecue.” Dave, Mike and their unique, professionally trained culinary team have great fun every day. That fun translates into serving hundreds of customers daily both at the restaurant and through private catering events. What most people don’t realize is that, behind the smiles and laughter, their barbecue expertise comes from their deep understanding of what goes into barbecue quality. They have developed distinctive, out-of-the-ordinary recipes, source the best ingredients, procure the best cooking equipment and then prepare the food in the painstaking, time consuming manner that is required to produce the Sweet Baby Ray’s signature barbecue. While the name is familiar in most Chicago households, the restaurant, Sweet Baby Ray’s has only been open since December 2007.

For one, don’t expect your meat to come with sauce unless the pitmaster’s a maverick—in which case it might show Tup unbidden drenched in a sweet and spicy tomato concoction. And don’t look for a plate—the barbecue in FIRED UP these parts is served on scrunched butcher paper. Ditto Texas Hill Country barbecue for forks—the big stack of sliced white bread is there for spots compete to be known as ripping and wrapping. Lastly, go hungry. the best in the state. San Antonio is a good place to begin your journey onto the Southern Foodways Alliance’s Southern BBQ BY JAY CHESHES Trail. Though not known as a barbecue town—Tex-Mex is the signature cuisine here—it’s the gateway to Hill Country, home of the best slow-cooked smoked meat the Lone Star State has to off er. About an hour from San Antonio, Luling is your fi rst stop for a barbecue breakfast; City Market opens bright and early (sausage is ready at 7am; brisket and ribs at 9:30). Joe Capello has run the pits at this legendary ’cue joint since 1969, serv- ing three meats and two sides (pinto beans and potato salad), and that’s pretty much it. Don’t be fooled by the clean-cut surroundings: The oak-smoked pork ribs, beef sausage and brisket are as old school as they come. Like so many Hill Country barbecue spots, this one evolved from a venerable meat market.
