Rías Baixas and Penedès (where almost all Cava comes from) produce many of the most vibrant wines from Spain. Europe’s third most mountainous country, Spain has many elevated, cool climate vineyards, critical to help balance the robust ripeness from strong sunlight. Soil types are ideal for wine growing: various blends of calcareous (limestone), clay, sand and alluvial, depending on the region. Spain’s finest winemakers are combining the best traditional and cutting-edge methods in viticulture and winemaking to produce outstanding wines.

Poema crafts top-quality, low-production Cavas following the same traditional method used in Champagne. Made according to the Cava DO’s strict regulations, Cava is Spain’s acclaimed sparkling wine.

• Made utilizing metodo tradicional, the traditional Champagne method • Smaller production, quality-oriented Cava house in a sector dominated by industrial producers • Fruit sourced in Penedès, the traditional center for quality Cava wine growing • 20% of vineyard sources are estate- owned; the rest are under long-term contract with growers who follow strict quality specifications • Fruit is sustainably farmed using organic fertilizer and no herbicides

Noteworthy: Unlike other Spanish DOs, Cava DO is not restricted to a single geographic area, though its most acclaimed bottles come from Penedès, with a winemaking tradition dating back to the 6th Century BC. Poema owns 29 hectares of vineyards surrounding the town of Sant Sadurní d’Anoia, the historic birthplace of Cava in 1872.

An artisanal, family-owned and run winery begun in the 1950s, Bodega Don Olegario blends technology and tradition as a top producer of Albariño, the Rías Baixas region’s most famous grape variety.
