MIQUEL PONS Winery | DO Cava, DO Penedes & DO Montsant, Spain MIQUEL PONS Winery | DO Cava, DO Penedes & DO Montsant, Spain Miquel Pons has 250 years of winemaking heritage, with 60 hectares of vineyards around their ancient estate of Cal Montargull in the D.O. Penedès. Our philosophy is to respect the land and minimize our intervention in winemaking. We only use estate-grown grapes and local yeasts to maximize the expression of terroir. Our Cavas are disgorged naturally without freezing the neck of the bottle in order to avoid the thermal contrast and the cooling of the yeasts, preserving the natural aromas of the cava. The DO Penedès enjoys an ideal Mediterranean climate. Miquel Pons owns vineyards in both Penedès Superior (higher rainfall and a wider daily temperature range) and Marítim (milder coastal climate) subregions. Brut Nature Rose is 100% Trepat and bottle aged with lees for 20 to 24 months. Miquel Pons Cavas: Both Brut Reserva and Brut are made with 40% Macabeu, 40% Xarel-lo and 20% Parellada grapes. The Reserva has 24 months of bottle aging with the lees and the Brut 18 months. Nuria de Montargull Cavas: Brut Reserva made with 55% Xarel.lo and 45% macabeu. Brut Nature DO Penedes Rose is 100% Trepat with a very short skin contact. Both bottle aged for 20 months with lees. 77Veremes: The 100% Xarel.lo is fermented in tanks and aged in new French oak barrels for 4 moths. The Grenache, Syrah and Cabernet Sauvignon blend is aged in second-use French oak barrels for 8 months. 77 Veremes (harvests) pays homenage to founder Miquel Pons, who has 77+ harvests under his belt..

With the global market for sparkling wine continuing to grow, we pride ourselves on sourcing the best quality sparkling wines at affordable prices and packaging them in ways that appeal to international consumers. TOCA CAVA BACKGROUND Like all the wines in our range, we tasted thousands of Cavas before creating the Toca range. We wanted a wine that ticked all the boxes: • Classic Cava identity: native Macabeo, Parellada and Trepat grapes • Clean taste profile: Clean, fresh and crisp style with none of the mousiness sometimes associated with Cava. • Fine, integrated bubbles: Made using the traditional bottle fermentation method and aged for 12-15 months prior to release • Estate wine: Rather than buying in grapes, the winemaker uses grapes from vineyards he was personally responsible for planting in 1985. TOCA CAVA THE INSPIRATION • The word “Toca” means touch and it gave us many ideas to play with: • Texture – the tactile nature of the bubbles on your palate • Finger prints– the delicate touch of the hands that pick the grapes and make the wine with such care • Contour lines- we saw that the contour lines of the nearby Serra de Tallat resemble finger prints TOCA CAVA THE RESULT A premium, iridescent label features embossed ridges that echo fingerprints.     Cava Brut Reserva Castillo Perelada Brut Reserva is made with wine of the three typical cava varieties: Macabeo, Xarel·lo and Parellada. This is a classic cava made according to the traditional method, with the utmost rigor and care that are characteristic of Castillo Perelada. Designation of Origin: Cava, a sparkling wine which is made following the traditional method, has fully established its identity in markets abroad in the last thirty years. Native grapes, a warm climate and the growing country all contribute to its distinctive character. Cava's name derives from the Spanish word for an underground cellar, which became the term for the production method. Varietals: Macabeo (40%), Xarel·lo (30%), Parellada (30%). Winemaking: Temperature controlled fermentation off the skins. Ageing: The second fermentation takes place in the bottle, following the traditional method. It stays in the cellar for about fifteen months before disgorging. Graduation: 11.5% by Vol. Free SO2: 24 mg/l. Total SO2: 95 mg/l. Total acidity: 4.00 gr/l. (s.a.) Volatile acidity: 0.18 gr/l. (a.a.). Sugar: 8 gr/l. Type of bottle: Cava, green, 75 cl. Tasting note: Pale yellow colour. Good bubble detachment. Thanks to its ageing, it has developed a fine aroma with fruit hints.
