The Marineria

San Nicola di Mira

THE ancient Romans were crazy about it. They used it to season foods. They put it everywhere. On meat, on fish, on vegetables. The sybarites who excelled in many things also used it very much, but that as for eating, drinking, making love and idling, they had no equal in the then known world. The importance of this sauce in the daily life of Rome was of great importance even if the researchers are still investigating the reasons, trying to understand the recipe, still completely secret. One of the few in the world to know it is Giovanni who has no intention of revealing it. The 3 known ingredients are fresh anchovies, salt and ... a year and a half of time. The "secret" lies in herbs. Giovanni reveals only one: the "purchiacca", but nobody knows what it is and where it is.

The fact that they ate the sybarites means that the product has many qualities. Among these the aphrodisiac was certainly the one that most liked that voyeur people. They used it on all the �dishes. Two drops on meat, fish, vegetable, fruit. The preparation is really simple. For 500 grams of pasta, 2 tablespoons of garo are enough to add 1 tablespoon of oil, a little parsley and minced garlic. Then leave to marinate while you cook the pasta. Scrape the pasta and sauté the marinated sauce in a pan without fire. It's a quick dish, practically the pasta cooking time. Waiting a little 'garo diluted with oil on a toast is extraordinary.

A discourse that local restaurateurs have well understood: revival of traditional recipes to offer customers and tourists the taste and the pleasure of being at the table.

Tastes of the sea IN Trebisacce the seafood is always fresh thanks to the local fleet. For this reason do not miss the seafood soup, the nudicella, cuttlefish and peas or cuttlefish “šcattulijàte” to the pan, the raja at trebisaccese, the different cooking methods of the anchovies and sardines (those roasted on the grill, barely touched by a bit of salt, oregano and a few drops of lemon).

INNUMERABLE and simple are the peasant dishes like licùrde flour, with egg, with onions, pipirusse-eggs and sausage, pipirusse and ppatàne, peppers and eggplant, vegetable soups, firrazzùli, maccarùni, rašcatilli, onions, dried foods and preserved, jams. And then again the tasty meats and pork sausages. The traditional containers are still in use, the terracotta of the local pottery (truzzarùghe) to preserve the sausage, the soppressate, the jelly, in oil or in the suet. Food from the world of pastoralism is also widespread: from cheeses to ricotta, to various lamb and goat meat. And then again the fried zeppole in oil, those of the Christmas tradition. Trebisacce is also the country of citrus fruit and homemade infusions and liqueurs are prepared in the taste of lime and limoncello, of mandarin orange. But also with the taste of blueberry, cìveze i ruvetta (blackberry), with black olives. A further feature of the Trebisaccese cuisine is represented by the traditional bread making (in the family and in the farms): breads, pitte, taralli, variety of cutters and desserts. All local bakers have retained the relationship with tradition. In addition to homemade bread you can find the various forms of “pitte".

Dishes with nudicella: -Vermicelli with sardines (served with tomato sauce, fresh sardines, garlic, basil and parsley); - Nudicella pittarelle (rosamarine fritters with egg flour, salt, pepper and parsley). They should be tasted as soon as they are ready with a good glass of wine; -Nudicella with hot peppers: nudicella dough with chopped hot pepper, salt as required. It should be spread on bread adding a few tablespoons of olive oil. Consume in a few days. A delicacy !!! Variety: freshly prepared nudicella, after having seasoned it (as above), can be tasted in larger quantities adding, to the ingredients mentioned, also the onion (the white one or the tender one with green sprouts - the cudicìne - which release a delicate aroma and inviting). Another tasty dish is the dish with spaghetti and spicy nudicella.

Sea, what a passion

The sea is not to be missed. Crystal clear, very clean, with first level services so much to deserve (they are now 5 consecutive years) the Blue Flag. It is usable from May to the end of September (for the bravest even from April to October). The water temperature in the summer is around 28 °. In spring and autumn it also drops to 18 °. Almost all water sports are practiced. Snorkeling, water skiing, scuba diving to explore the beautiful depths and look into the eyes of the fish that roam around you. The services are very professional and suitable even for the little ones. It is a true paradise for young and old. A visit to the beach and, if possible, a dip in the sea are strongly recommended to all visitors. Of all ages.

Party of the Biondo

THE "late blond" is a native orange that is born only in Trebisacce, It is a kind of world exclusive. The orange matures in May-June and the Trebisaccesi have been celebrating it for over five years at the beginning of June. The fruit has very particular organoleptic properties. It is sweet and juicy. It can be used both at the table, in the preparation of drinks, and as an ingredient in foods and desserts. However, production is very limited and the maturation period lasts too little. It is a fruit that must be collected and eaten. It is a Calabrian excellence to be tasted in the most varied ways during the party. Banquets are set up where products that contain the precious fruit are sold. This type of fruit is born and mature in Trebisacce probably due to the microclimate determined by the mildness of the temperatures due to the presence of a warm sea such as the Ionian and the natural protection of the freezing currents that the Pollino massif, located just behind the village.
