Knopf, Inc.--Index of Correspondents (Br-Do) The index contains box and folder number references to correspondence with individuals and firms. In some cases, the numbers refer to files about an author, and do not contain correspondence with the author. These entries are marked with an [S], for subject, just after the author's name. Each box and folder number following an [S] entry will only contain correspondence about the subject. Entries labeled [O] contain only outgoing letters to the individual or firm. Each number following an [O] entry will refer only to outgoing correspondence. For entries not marked with either an [S] or an [O], box and folder citations will refer to a mixture of correspondence to, from, and occasionally about the individual or firm. When an individual box and folder number is followed by (C), it means that specific citation refers only to a cross-reference. Corporate names sort before personal names. [O] = Outgoing correspondence only [S] = Correspondence about the person only (C) = Folder contains only cross-reference to other folder Braatoy, Sigrid -- 728.5 Brabson, Fay Warrington, 1880-1970 -- 62.10, 83.1, 122.9 Bracco, Edgar Jean -- 100.4 Bracco, Edgar Jean, Mrs. -- 17.17 Brace, Don -- 595.6 Brace, Gerald Warner, 1901- (Boston University) -- 43.7, 58.5 Brace, Ida -- 522.5, 564.15 Brace, Richard Munthe, 1915- (Northwestern University) -- 43.5(C), 250.2, 688.7 Braceland, Francis J. It is about class, consumption and culture; it is also about food and identity. In the mid-nineteenth century, restaurants served French food prepared by European chefs to elite Americans with aristocratic pretensions. “Turning the Tables” explores the subsequent transformation of aristocratic restaurants into public spaces where the middle classes could feel comfortable dining. Digging deeply into the changes restaurants underwent at the turn of the century, I argue that the struggles over restaurant culture—the battles over the French-language menu, the scientific eating movement, the celebration of cosmopolitan cuisines, the growing acceptance of unescorted women diners, the failed attempts to eliminate tipping—offer evidence that the urban middle class would play a central role in the construction of twentieth-century American culture.
