    DOMAINE JEAN-BAPTISTE PONSOT Jean-Baptiste Ponsot farms a total 8.5 hectares in the Rully AOP with a deep respect for the land that his RULLY 1ER family has been fostering for three generations. He employs organic practices but hasn’t sought out “EN BAS DE VAUVRY” certification, preferring instead to prioritize the intrinsic health of the ecosystem and his vines. Domaine Ponsot’s holdings cover parts of three Rully premier crus in Burgundy: Molesme, Montpalais, and La Fosse. In addition to the 1er cru parcels, Ponsot farms 2.83 hectares in the “En Bas de Vauvry” Monopole as well as another 0.46 ha in “Rully Village” vineyards Varietal/Blend: Chardonnay Farming: sustainable with organic practices Soil: clayey limestone soil Exposure: E-S-E Trellis System: Guyot Harvest Technique: by hand based on timing of lunar cycles Domaine Ponsot was established by Lucien Ponsot in Ave. Year Vines Planted: 2000 1954 without essentially releasing a commercial Fermentation: fermentation in 15% stainless “Domaine Ponsot” bottling. Shipments of products using Cachet-Tag commenced in October 2018. If the Cachet-Tag is removed from the wine bottle, the NFC tag breaks and the data on it can no longer be read. This can prevent relabeling and other types of fraud and is an effective measure against counterfeit and imitation products. When scanned with an NFC-enabled smartphone, the data stored on the IC chip can be read by a dedicated app provided by Selinko SA (head office: Belgium; CEO:Patrick Eischen), a company expert in authentication, gray market detection, and marketing services for connected objects.     DOMAINE DUJAC 2017 Burgundy: A Modern Classic Vinous – Neal Martin January 2019 aybe it is only in the last couple of years that I I asked his opinion of the quality of the 2017s, and as usual, have truly appreciated Jacques Seysses’s Alec replied candidly. “I don’t think they are as great as 2015 influence upon Burgundy.
