BINIGRAU Nounat

Binigrau is located in Biniali, a quaint village of holiday homes a few kilometers inland from Palma. Founded in 2002 Binigrau is an estate of 30 hectares of indigenous varietals: Montonegro, Collet and Prensal, as well as international varietals: , , and . Miguel and Mathías Batle Pastor are both proponents of minimalist farming cultivating their organically with some additional biodynamic practices. They are not following any current fad but simply farming the same way that their ancestors did centuries before. Believing that they are stewards of the land they feel natural farming results in better fruit while respecting the environment in which it is grown.

ORIGIN While the farming looks to ancient practices the cellar is quite modern Spain so when the arrive after harvesting by hand, they are fermented in large tanks, and smaller French oak barrels for the red and APPELLATION Chardonnay while the indigenous Prensal is aged in stainless steel tanks Terra Mallorca and concrete eggs.

SOIL Clay limestone Always roughly equal parts Prensal and Chardonnay the Nounat is difficult to characterize. There is a certain Burgundian quality but with a more saline and volcanic minerality. The Prensal is aged for 7 months in stainless AGE OF VINES 15-40 steel and concrete egg while the Chardonnay spends the same amount of time in French oak. Bottled unfiltered.
