They might limit themselves to plant- based ingredients but Sara Kramer and Sarah Hymanson’s dishes jump with flavour and zest. “I feel like the market is the seat of a lot of change in LA so it’s exciting to watch that from the inside,” says Hymanson. Try the green falafel sandwich, which she describes as “not traditional at all”.
