Wilson July 20, 2001 Blacksburg, Virginia Keywords: pressure frying, nitrogen gas, steam, fried product quality, frying oil quality © 2001 Bhundit Innawong Improving Fried Product and Frying Oil Quality Using Nitrogen Gas in A Pressure Frying System By Bhundit Innawong ABSTRACT The commercial pressure frying has been limited to frying huge amount of products due to its dependence on the amount of moisture released from the food for generating the desired pressure. This study investigated the feasibility of using nitrogen gas as a substitute for steam in the pressure frying system. The effects of various process conditions (source of pressure, frying temperature and pressure) on fried product and frying oil qualities were evaluated. Frying experiments were performed on breaded/battered poultry products including chicken nuggets (homogenous) and chicken fillets (marinated, intact muscle). Efforts were also made to develop rapid methods to determine frying oil quality and discriminate among fresh, marginal and discarded oils using a chemosensory (also known as electronic nose) or Fourier transform infrared spectroscopy (FTIR-ATR). Frying temperature and pressure affected fried food quality. An increase in frying pressure resulted in tender, juicier products with less oil uptake due to high moisture retention. An increase in frying oil temperature resulted in an increased moisture loss, oil uptake resulting in less tender and juicier products. -

WAY BACK WHEN: LOOKING BACK IN HISTORY Happenings in the Cookeville area as recorded in the pages of the Herald Citizen Newspaper, Cookeville, TN. By Bob McMillian 1960’s (Compiled by Audrey J. Lambert) http://www.ajlambert.com 1960 (January 11, 1960) The town's two newspapers have changed hands. The Citizen has been sold to Coleman Harwell, former editor and vice•president of the Nashville Tennessean. The Putnam County Herald has also been sold to Harwell by its former publisher, William Matthew. Joining Harwell as a partner in the venture is John Mott, the editor of The Citizen. (January 13, 1960) Tennessee Tech professor D. W. Mattson says they don’t make them like they used to. He’s referring to roads, specifically the road he helped rebuild through Cookeville’s Westside business district in 1930 when he was resident engineer with the State Highway department. It’s still in good shape today. The road’s foundation was a thick sheet of concrete. Mattson, now chairman of TTU’s engineering department, says most of today’s roadbeds begin with layer of crushed stone. It just doesn’t hold up as well. Broad Street through Westside has been heavily traveled for the past 30 years and shows no signs of wear, he says. The one exception today is the new interstate highways like the one that’s due to be built past Cookeville in a year or so. He says the new superhighways are using concrete roadbeds and should last for at least 50 years. (January 13, 1960) The town’s two newspapers have changed hands. -

Frisby was a Colombian breaded and fried chicken restaurant chain with a strong and very particular organizational culture, 130 restaurants, and annual sales of US$42 million. Despite the 2009 world economic crisis the fast food restaurants industry had become very dynamic particularly in Colombia and was attractive to foreign investors and multinational companies. General Manager Francisco Guzmán was analyzing the option of buying Pinky, a competitor located in the city of Medellin that had generated important brand blunders and now facing market share losses. 2 That afternoon, in February 2010 in the city of Pereira, Colombia, was like any other. Frisby’s senior management team was meeting with the company’s founding partners, Mr. Alfredo Hoyos and his wife, Mrs. Liliana Restrepo, in the board room at the company headquarters in the Dosquebradas district. Mr. Francisco Guzman, the General Manager, was leading the meeting; the room was tense. They needed to decide whether to buy the Pinky Company, which had been a problematic competitor with a peculiar history in the city of Medellin. Frisby’s management was evaluating the possible purchase meticulously and carefully since sales in the city of Medellin represented almost 30% of the company’s total sales, and Pinky had been the cause of enormous brand confusion in the market. -
