VIGNA: SAN GIUSEPPE 2011: ★ ★ ★ ★ ☆ MGA: BRICCO BOSCHIS Vintage Conditions COMUNE: Winter: (Dec, Jan, Feb): very cold with great snow, fog and wet conditions. ( for Barolo 100%) Vegetative Cycle: (Mar-July): even bud break, then cooler than normal. Flowering: (25 May-10 June): sunny and dry, but cooler than usual. Vineyard Parcel: San Giuseppe Productive Cycle: (Aug-Oct): hot from the 10th August onwards. Vineyard Size: 3.77.99 ha Period: hot and dry conditions. Excellent picking. Vineyard Character: hillsides, sheltered amphitheater, hilltop Vintage Characteristics: a year of contrasts: cooler conditions up to the 7 Slope Direction: South-West August, then hot conditions thereafter. The wines thus show characteristics of Average : 38 hl/ha both hot and classic : generous, fruity perfumes with a structured, moderately tannic palate that has excellent acidity. Winery Operations: • Full destemming; fermentation with indigenous yeasts only. • Use of Horizontal Fermentation tanks. • Traditional fermentation with semi-submerged cap with punch-downs and pump-overs. • Controlled fermentation temperature at 29°C on indigenous yeasts. • Total time: 30-35 days. • in cement tanks during spring following the harvest. • Cask ageing for 48-60 months in Slavonian botti of 20-30-50-80-100 hl. • Will be bottled summer-2017 • After bottling, the wine is aged in our cellars for a minimum of 12 months before release. Cavallotto Family Tasting Note: The cool conditions that dominated the first half of the 2011 growing season are apparent in the focused, structured mouthfeel of this wine, and the hot conditions that prevailed after the early part of August show themselves in the vibrant, ripe and generous fruit of the aromas and flavors. While this wine will be ready sooner than other vintages of RSG, this wine should age gracefully for at least 3 decades. The ripe, sweet tannins and good freshness keep the superb fruit in balance and the finish is especially long and fruity. (Cask Sample, March 2017)

Drinking Window: 2018-2038 Notes on Matching with Food: The wine is best with second courses of red meat, simply grilled or roasted. Also good with hard and aged cheeses.
