ISS Welcomes new Graduate Assistant! Luke D'Elia After having been an International Student Am- bassador for the 17’-18’ academic year I have had the lucky opportunity of meeting hundreds of international students, in which many encoun- ters resulted in friendship. For that, I could not be more grateful. There really is no quintessen- tial way to describe the enjoyment, knowledge, and humility one gains from interacting with oth- ers from a multitude of diverse cultures. It is simply amazing. Having also been an interna- tional student myself once before, I can at least partially relate to the wide array of unpredictable emotions and experiences one will have living in an entirely different country. One thing that I do know for certain, is that a kind stranger in a foreign land can make all the difference and so I strive to be that pillar of com- fortability. That is why I could not be more excited to expand and enhance my abilities of doing such as ISS’ new Graduate Assistant. My passions for traveling, learning from other cultures, organizing and partak- ing in cultural events, and spreading cultural awareness all meet at the cross- roads of this new point in my life. I am delighted about the personal enjoyment that will come, but more importantly I am ecstatic about the enjoyment I can bring others and the difference I can bring to this world. It is almost as if the timing of this juncture could not be more perfect. In a time when centuries of progress are currently being regressed by prejudice and hate, I am blessed to be in a position of power to stand up for those of distinct origins. May our new journey begin, together, towards a better tomorrow. INTERNATIONAL STUDEN T S E R V I C E S P A G E 3 Springfield Specialties Horseshoe Sandwich A horseshoe is an open-faced sandwich originated in Springfield, Illi- nois. This sandwich is made with two pieces of toasted bread (often white bread or Texas toast), two pieces of hamburger patty, and a large portion of French fries covered in cheese sauce. The sandwich was created in the late 1920s by chef Joe Schweska at a Leland Hotel in Springfield, Illinois . Traditionally, the Horseshoe Sandwich is served on a sizzling metal plate, known as the Anvil, two thick-cut slices of bread are toasted and added to the plate. Then a thick slice of ham, shaped like a horseshoe is added, and to it a Welsh rarebit cheese sauce made of white sharp cheddar, and then just before serving, fresh-made French fries are added as the nails in the horseshoe. The se- cret to this sandwich is the delicious cheese sauce. At present, a horse- shoe sandwich offers either a thick fried ham steak or two large ham- burger patties, and the cheese sauce is poured over the fries. Want to give your taste buds a nudge? Illinois Road Food Attractions 0 Like Sep 6, 2010 Michleen Collins Cheese Sauce Is an Important Ingredient - xandert It's what to eat in Illinois. The horseshoe is a famously cheesy, meaty, saucy and indulgent sandwich served at some of the best restaurants in Springfield. Springfield, Illinois, restaurant fans love to weigh in about who has the best horseshoe sandwich. It's Springfield's local and road food legend. A typical horseshoe is so layered, ladled and laden with rich, high-calorie fare that when waiters deliver the piping-hot platter, diners may just say, “Whoa!” Springfield's Horseshoe History The original horseshoe was assembled in 1928 at Springfield's Leland Hotel by Executive Chef Joe Schweska. Springfield’s Red Coach Inn and other restaurants later served the horseshoe sandwich or variations of it. There were some reports that Leland staff who had moved on to other restaurants invented the horseshoe. They may have contributed to later variations. However, Tony Leone, Springfield's resident "horseshoe historian," says it's "indisputable" that Chef Schweska was the original 'Shoe Chef. Leone, who owns Springfield's historic Pasfield House Inn and serves on the Illinois Historic Preservation Board, says it is well documented that Schweska created the original horseshoe sandwich. The Pasfield House Inn won "Best Breakfast Horseshoe" honors for an adaptation of its popular Egg Strata, 'shoe-style, in the World Horseshoe Cookoff. The event coincided with the 100th anniversary World Horseshoe Pitching Tournament, hosted by Springfield in 2009.

Horseshoe Sandwich History: Springfield's Culinary Horse Race 0 Like Dec 19, 2010 Michleen Collins Old Leland Hotel, Springfield, Ill. - TLeone Illinois travelers seeking the origin of this Springfield restaurant icon will find the clue begins with Chef Schweska, in the kitchen, with a ham knife. Springfield, Illinois, horseshoe fans and foodies are often chomping at the bit to try the next big horseshoe. To trace its roots (or hooves), its origin, its ingredients, its timeline and its modern permutations, a little sauce-sleuthing is in order. Locals, road food fans and history buffs need to trace the trail back in time to 1928 to understand Springfield’s open-faced sandwich novelty. The first horseshoe was assembled in the restaurant kitchen of the elegant old Leland Hotel. According to Tony Leone, Springfield’s designated horseshoe historian, Chef Schweska is the undisputed inventor of the original horseshoe sandwich. Leone says he has the documents to prove it. In addition to owning and operating the Pasfield House Inn, Leone serves on the Illinois Historic Preservation Board. Leone says he has the records and it is well established that Chef Joe Schweska is the original creator of the horseshoe sandwich.
