In addition, our dedicated team of highly-skilled service and banquet experts contributes towards our credibility as a world-class convention and exhibition centre. 1 Sustainability in Our Cooking Just-in-time, Just-in-sequence With our just-in-time, just-in-sequence food delivery, only the required quantity of ingredients is ordered to arrive within a sufficient timeframe, which then allows the contracted food orders to be freshly prepared in time for the meal service. This practice prevents over storage of fresh produce and over ordering which could result in food wastage. Ordering of pre-cut ingredients Our ingredients are ordered and delivered pre-cut, thus reducing food wastage and saving our chefs time and energy to focus on more important tasks – cooking and dishing out culinary delights to deliver a gastronomic experience for our guests. Cooking with energy-efficient kitchen equipment We use high-tech, energy-efficient cooking equipment such as induction wok hobs and smart combi ovens which generate a much lower amount of heat. This helps to maintain a cool environment in the kitchen, without overworking our air-conditioning system. With the use of these advanced cooking equipment, the time used for cooking is also shortened, resulting in lower energy consumption as compared to a traditional kitchen. Recycling of waste vegetable cooking oil Our sustainability efforts do not stop in the kitchen. Annually, our kitchens generate about 8,000 litres of cooking oil from food production.
