THE UNIVERSITY CLUB OF TORONTO Member’s Wine List February 2018 Introduction to the Wine List On behalf of the Wine Committee I am delighted to introduce to you the University Club of Toronto’s wine list. May I begin by offering a warm welcome to our members and guests to the delights of the University Club’s wine cellar. There are many benefits to being a member of the club, and one of the distinct pleasures we suggest you take advantage of is the enjoyment of fine wines at unusually good – let’s say unheard of – pricing. We have adopted a discounted wine pricing policy specifically to thank members for supporting the Club through their dues. This policy covers the sale of wines in the bar and regular dining room and limits the mark up to a $28 maximum. This provides an opportunity to sample some excellent wines that you may not have had an opportunity to purchase at home, with it being an affordable pleasure. To give you an example of how this compares to local restaurants in Toronto, a bottle of Chateau Palmer 1982 sells in our dining room for $280 while the price at three leading restaurants in Toronto with sizeable cellars: Restaurant #1: $560; Restaurant #2: $620; Restaurant #3 $600. We hope that you enjoy all the benefits the Club has to offer – a wonderful meal prepared by Chef Patrick Desmoulins accompanied by the best quality and value provided by our expansive cellar. Santé! Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely fine, persistent pinpoint bubbles rising in delicate strands to the surface of the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries is offset by elegant, subtle floral and earth nuances. On the palate, the ripe, full berry flavors are vibrant yet refined, delicately balanced by a fresh acidity which carries into a crisp, refreshing finish of persistent length. "A swirl of bubbles carries fresh raspberry flavors along with a lively green edge of acidity. W128 Cattier Brut Premier Cru NV 71.00 The nose is complex evoking dried fruits, honey, brioche. Fresh mouth with hazelnut and red fruits aromas. Long finish of gingerbread's notes. W119 Nicolas Feuillatte Brut NV 68.00 W127 Domaine Luquet Cremant de Bourgogne NV 41.00 W132 Paul Zinck Cremant d’Alsace Rose NV 48.00 Salmon-pink with glints of silver, the wine’s exuberance diminishes after a few seconds, the bubbles becoming fine beads. Primary aromas of biscuit, bitter orange, red currant and cherry. Secondary notes of mint and sweet spices. Creamy texture with immediate notes of brandied cherries. Score - B+. The appellation is 100% Carneros. The Brut was aged in the bottle for three years before release. It will continue to develop further depth and complexity as it ages. Wine Spectator Appealing aromas of Gala apple, toasted almond and vanilla lead to focused, creamy Asian pear and spice flavors that finish with a vibrant crispness. Drink now through 2012. Score: 89. 4 * = please ask your server to decant this wine. THE UNIVERSITY CLUB OF TORONTO WINE LIST: v. 02.18 Vintage $ Red Wines FRANCE Bordeaux R31 Ch. Gruaud-Larose (2ieme Cru Classé) (St. Julien) 1990 261 .00 * Gruaud-Larose was superb at the most recent tasting. Moreover, this might be a 1990 that is still affordable. The wine exhibits a thick-looking, plum/purple/garnet-like color. A sensational nose of jammy black-cherries, earth, cedar, and herbs has become far more intense and striking. The wine displays sensational richness and power, but not quite the burly, monstrous size and hulking weight of the 1986 or 1982. Yet it reveals impressive stuffing and power. The low acidity emphasizes the thick, juicy, succulent fruit in this backward yet rich, chewy wine. This was the finest showing yet for the 1990 Gruaud Larose. Score 93 – Robert Parker R147 Ch. Palmer (3ieme Cru Classé) (Margaux) 1996 258.00 * This wine, a blend of 55% Cabernet Sauvignon, 40% Merlot, and 5% Petit Verdot, is performing well after its July, 1998 bottling. It boasts an impressively saturated purple color, in addition to a backward yet intense nose of black plums, currants, licorice, and smoke. Following terrific fruit on the attack, the wine's structure and tannin take over. There is plenty of sweet fruit, and the tannin is well-integrated, but the wine requires 7-8 years of cellaring. Anticipated maturity: 2007- 2028. Score 91, Robert Parker. R80 Mouton-Rothschild Grand Cru Classé (Pauillac) 1996 393.00 * Wine Advocate Score: 94 Maturity 2007-2030. Cabernet Sauvignon 77%, Cabernet Franc 13%, Merlot 10%. From magnum. This wine has a superb colour compared to the maturing wines tasted alongside; it has a dark core, a dense rim, with plenty of red pigment still. This is very impressive. The nose here is divine; it has a very typical profile for the vintage, full of iron and rust, but enticingly perfumed with violets. It kicks off very elegantly on the palate, and it has a wonderful texture, composed rather than showy. It has great style; the tannins and acidity show through and there is plenty of perfumed character as there is on the nose. There is structure and grip, and a fine persistence. This very superb wine, with its reserved character, will go for more than ten years yet. At its apogee this will be truly remarkable. 19+/20 (February 2008) The Wine Doctor – Chris Kissack R138 Ch. Latour Grand Cru Classé (Pauillac) 1998 270.00 * Steven Tanzer IWC: Red-ruby. Deep aromas of cassis, licorice and lead pencil. Deeper than Les Forts but currently rather mute in the middle. Strongly minerally. Offers classic Latour structure and spine. Finishes with sneaky, subtle persistence. Score 91 R158 Ch. Pavie (St. Emilion) Magnum 1999 406.00 * The inky/ruby/purple-colored 1999 exhibits a tight but promising nose of crushed stones, a liqueur of blackberries, cherries, and black currants, and subtle smoke and licorice in the background. Powerful, with impressive elegance, fine harmony among its elements, a multi-layered texture, it has a finish that lasts for 50+ seconds. There is considerable tannin, but it is well-integrated. Give it 3-4 years, and drink it over the next two decades. A profound effort for the vintage, it is an example of a perfectionist proprietor pushing the envelope of quality. "The 1999 Pavie is a candidate for "wine of the vintage".
