Preface Traditional Chinese Medicine (TCM) is a school of medicine that originated in China thousands of years ago. It consists of a very comprehensive system of diagnosis, differentiation and treatment based on theories deeply rooted in Chinese culture and philosophy. TCM takes a holistic approach to both the understanding and treatment of the human body. This means that everything in the universe is interconnected and mutually affects each other to varying degrees. Similarly, TCM treatments don’t focus on the condition of the patient’s body alone. They take into account such environmental factors as the patient’s lifestyle and diet. As such, a large part of the efficacy of TCM is due to the suggested lifestyle changes that not only prolong the effects of the treatment, but also improves the overall health of the patients and prevents them from having relapses and/or contracting other diseases. Dietary therapy or medicated diet is perhaps the most effective and most commonly suggested by TCM practitioners. As the name suggests, medicated diet involves treating and preventing diseases by making changes in one’s diet. A TCM practitioner will suggest certain foods to eat while other foods to avoid based on each individual’s body condition. In addition, Chinese medicinal herbs are often incorporated into the daily diet to further enhance the effect of the dietary changes. This recipe book is a compilation of over 100 recipes that incorporate certain foods and herbs to treat and prevent a multitude of diseases.

    Spring Soups & Small Plates Cooking Patryk Battle & Meredith Leigh Living Web Farms & French Broad Food Co-op March 24, 2016 6pm-7:30pm Sweet & Spicy Chilled Carrot Soup 1 stick butter 1 lb. carrots, chopped to ½ in. pieces 1 quart + ¼ C. vegetable stock 1 onion, chopped 1 t. salt ¼ t. coriander ¼ t. cumin ¼ t. paprika 1/8 t. cayenne 2 T. honey 1-1/2 t. lemon juice extra lemon slices and honey for garnish Melt the butter in a soup pot. Meanwhile, grind and mix the salt and the spices. Saute the onion, carrot, spices, and salt until the onions are golden and the carrots are coated. Pour in stock, boil, then reduce to a simmer until the carrots are tender. Using an immersion blender, puree the soup until creamy. Add honey and lemon juice. Simmer 15 minutes more to meld flavors, then remove from heat. Cool to room temperature. Refrigerate, covered, until completely chilled through. As soup is chilling, slice lemon as thinly as you can muster. When ready to serve, ladle soup by the cupful into serving bowls, and garnish with a few thin lemon slices, and a drizzle of honey. Spring Vegetable Terrine with Balsamic and Goat Cheese 1 lb watermelon radish, diced ½ lb. snow pea, sliced thinly 1 leek, white part sliced into thin rounds, and green part chopped roughly 1 celery rib, chopped 1 large bunch parsley 2 carrots, rough chopped 10 black peppercorns 1 t. kosher salt 1-1/2 C. white wine 3-1/4 C. water 2 T. balsamic vinegar 2 envelopes unflavored gelatin 4 oz.
