Coconut Cream Pie Bars

For the crust 1 cup (2 sticks) butter 2 cups all-purpose flour ½ cup powdered sugar

Instructions Preheat oven to 350 degrees. Prepare a 9 x 13” baking dish with a foil sling by tearing one sheet and placing it the width of the pan, another one the length of the pan. This way you will be able to pull the bars out of the pan with the foil. Cut the butter into the flour and sugar using a food processor or a pastry cutter. Press the dough into the foil lined pan. Bake 15- 20 minutes or until golden brown. Remove from the oven and let cool.  Tuesday-Saturday 10:00 am – 5:00 pm Late Night Tuesday ‘til 7:00 pm “We Keep You In Stitches” Page 1 of 15

For the bars 3 cups half-and-half 3 cups coconut milk 4 eggs 1 ½ cups granulated sugar 2/3 cup cornstarch ½ teaspoons salt 1 ½ cups flaked coconut ½ teaspoon coconut extract ½ teaspoon vanilla extract

Instructions Combine the half-and-half, coconut milk, eggs, sugar, cornstarch, and salt in a large saucepan and bring to a boil over medium-low heat, whisking constantly, until it is thick and bubbling. This can take 10-20 minutes. Add coconut, the extracts and stir. Pour this into cooled crust. Let it cool for 10 minutes or so before putting in the refrigerator. Refrigerate overnight.

Whipped Topping 1 tub whipped cream 1 cup coconut, for toasting

Instructions In a heavy skillet over low heat, toast the coconut until golden brown; set aside to cool. Top the chilled bars with whipped cream and sprinkle the toasted coconut on top. Return to the refrigerator until ready to serve.
