I landed in Abu Dhabi from New York back in October to join the Rosewood Abu Dhabi team as Managing Director, and in these past months I’ve met extraordinary people and sources of inspiration who make us strive for unique moments.

My time at The Carlyle in New York has seasoned me with festive magic that I cannot wait to develop in Abu Dhabi. For me, travel begins with the spark of inspiration and this year we have been inspired by you to push the boundaries and create home-made yet refined dining experiences.

Ingredients for filling • 750g Peeled, sliced green apples • 185g Sugar • 1 tblsp Plain flour • ½ tsp Ground cinnamon • ¼ tsp Ground nutmeg • 45g Pecan Chopped • 2 tblsp Cubed butter • Pie Shell (store bought) 1each (9inch shell)

Method Pre-heat oven to 220 C. For the crumb topping: mix all the ingredients lightly until crumbly. Set aside. For the filling: mix in a large bowl all the ingredients. In the tart shell, line with chopped pecans, cover with filling mixture. Layer it on top with crumb filling. Bake for 45min and serve warm or at room temperature. DECEMBER WILL BE A

Artisan Recipe APPLE BAKED WITH MARSALA & CINNAMON (A) Serves 6 guests Ingredients • 6 Apples • 4 Tablespoons of Unsalted Butter at Room Temperature • 50g Dark Brown Sugar • 150ml Marsala • 150ml White Wine • 2 Cinnamon Sticks- roughly broken • Crème Fresh as topping if preferred

Method Pre-heat the oven at 160C. Cut a small slice from the rounded end of each apple so that it will stand up, and then remove the core. Spread a little butter over the skin of each apple and stand them in an ovenproof dish. Scatter cinnamon sticker over the apples then cover the dish loosely with aluminum foil. Place in the oven and bake for 25 minutes. Once complete remove the foil and lower the oven temperature to 140C. Continue to bake for a further 25min, until the apples are tender and slightly shriveled. Serve warm with their juices and crème fresh as per preference.

FESTIVE CINNAMON & HAZELNUT COOKIE Serves 6 guests Ingredients • 1’200g Toasted & Grounded Hazelnuts • 1’000g Sugar • 300g Egg White • 32g Cinnamon Powder • 150g Icing Sugar

Method Pre Heat the Oven at 220 C. In a bowl, mix the grounded hazelnuts with the sugar and egg white. Pour the mix through a minced machine twice. Once complete add the icing sugar and cinnamon powder. In a new bowl whisk the icing sugar and egg white to form a glacee. Roll the dough out with a rolling pin to about 9mm height on a tray and brush with the glacee. Place the tray with the dough in the freezer for 30 min. Once the time is complete choose your favorite cookie cutters and place them on the dough. Cut away until the dough is finished. Place the cut cookies in a baking tray with baking paper.
