A Taste of Roast Scallops and Creamed Corn with Bacon - serves 6 appetizer portions from our tables to yours 5 ears of corn A Taste of 24grille 1 teaspoon extra virgin olive oil Roasted Heirloom Beets & Goat Cheese Salad 1/4 pound thick-cut bacon, cut into 1 inch strips 2 ounces goat cheese 1 medium onion, diced 1 teaspoon of chives 1 garlic clove, minced 1 teaspoon kosher salt, or more to taste 1/8 teaspoon of truffle oil 2 cups corn stock or chicken stock Salt and pepper to taste 1/2 cup creme fraiche 1/2 cup arugula 1 tablespoon unsalted butter 1 tablespoon candied walnuts 1/2 cup chopped fresh cilantro 1 teaspoon of balsamic reduction Grated zest of 1 lime (home made is preferred, 2 tablespoons vegetable oil otherwise bottled) 12 large (U-10) dry packed sea scallops 3 tablespoons of roasted Salt and black pepper heirloom beets cut into cubes
