Nicolas BAUMERT* En tant que boisson de civilisation, qui renvoie à un territoire et à des paysages, le saké est volontiers décrit comme le vin du Japon. Cette analo- gie peut même être une des traductions du mot nihonshu 日本酒 (Baumert 2006 : 98), et un regard extérieur, en particulier français, voit aisément se dessiner derrière les bouteilles et les savantes calligraphies des étiquettes, des terroirs de rizières ou de montagnes enneigées. La région de Niigata, par exemple, en fait un véritable produit de marketing en insistant sur la qualité de son eau, et les exportateurs usent souvent de cette image exotique pour leur promotion à l’étranger1. Mais existe-t-il vraiment des terroirs du saké ? La réponse n’a rien d’évi- dent, car le mot terroir – terme à l’origine des législations sur la qualité des produits agricoles en France et qui présuppose une relation entre origine géographique et qualité – est loin de s’appliquer naturellement au saké. Tout d’abord, le concept, qui n’a pas de traduction directe en japonais, est plutôt ambigu en français et ses définitions divergent selon les auteurs comme nous le verrons. Ebisu 49 | printemps-été 2013 | p. 5-29 6 | Nicolas BAUMERT | Peut-il exister des terroirs du saké ? premiers produits à bénéficier en France d’une législation fondée sur ce pré- supposé2, le saké est une boisson qui fait intervenir nombre d’ingrédients dont le principal, le riz, est aisément conservable et transportable. Enfin, la législation japonaise actuelle n’accorde pas véritablement d’importance à l’origine géographique des ingrédients du saké. La question pourrait donc être close. Pourtant, avec la crise des ventes et l’apparition de nouvelles régions de production, loin des traditionnels centres de production du Kansai, le débat s’engage avec pour but de séduire à nouveau, d’une part, les consommateurs japonais, exigeants et souvent blasés par l’abondance de produits de qualité disponibles, mais aussi, d’autre part, les consommateurs étrangers. La problématique d’une définition de terroirs du saké se place ainsi dans celle, plus large, d’un retour des consommateurs des pays développés à des produits d’origine, qui se manifestait déjà au Japon depuis la fin des années 1990 et qui, dans un contexte post 11 mars 2011, prend soudainement une dimension de sécurité et de traçabilité. Pour bien cerner les enjeux de la mise en place de terroirs dans le contexte japonais, nous proposons une étude géohistorique du saké, partant de la mise en place des premiers territoires de production jusqu’aux expériences actuelles. Le saké est une boisson géographique encore mal définie, dont les critères de qualité sont aujourd’hui remis en question par de nouvelles demandes des consomma- teurs, ce qui permet de s’interroger sur la pertinence de la notion de terroir appliquée à cette boisson. 2. Andrei This dissertation examines the historical and artistic circumstances behind the emergence in late medieval Japan of a short-lived genre of painting referred to as sankei mandara (pilgrimage mandalas). The paintings are large-scale topographical depictions of sacred sites and served as promotional material for temples and shrines in need of financial support to encourage pilgrimage, offering travelers worldly and spiritual benefits while inspiring them to donate liberally. Itinerant monks and nuns used the mandara in recitation performances (etoki) to lead audiences on virtual pilgrimages, decoding the pictorial clues and touting the benefits of the site shown. Addressing themselves to the newly risen commoner class following the collapse of the aristocratic order, sankei mandara depict commoners in the role of patron and pilgrim, the first instance of them being portrayed this way, alongside warriors and aristocrats as they make their way to the sites, enjoying the local delights, and worship on the sacred grounds. Together with the novel subject material, a new artistic language was created— schematic, colorful and bold. We begin by locating sankei mandara’s artistic roots and influences and then proceed to investigate the individual mandara devoted to three sacred sites: Mt. Fuji, Kiyomizudera and Ise Shrine (a sacred mountain, temple and shrine, respectively).

E-mail: [email protected] Received December 10, 2018; Accepted November 24, 2019 Abstract This article explores how the sense of territoriality and various background conditions of Japanese rural communities affect the emergence of folk boundaries, which are viewed here as the contours of residents’ cognitive territory represented by religion-based symbolic markers. Specifically, I look at how the particular social-geograph- ical conditions of different communities create diverse conceptions of such boundaries, including the presence or absence of the boundaries, within the same region. Here, I focus on three Japanese villages encompassing seven local religious communities of Shinto-Buddhists, Catholics, and former Hidden Christians on Hirado Island in Kyushu. These villages are viewed respectively as examples of contrastive coexistence, degeneration, and expansion in territoriality. Among the seven religious communities, only those believing in Shinto-Buddhism, as well as Hid- den Christianity, have maintained their folk boundaries. These communities satisfy the conditions of an agglomer- ated settlement form, a size generally larger than ten households, a location isolated from other communities within the village, and strong social integration. In contrast, Catholics have not constructed such boundaries based on their historical process of settlement. However, they have influenced the forms of Shinto-Buddhists’ territoriality, although not those of Hidden Christians.

Of Mice and Maidens: Ideologies of Interspecies Romance in Late Medieval and Early Modern Japan Abstract Interspecies marriage (irui kon'in) has long been a central theme in Japanese literature and folklore. Frequently dismissed as fairytales, stories of interspecies marriage illuminate contemporaneous conceptions of the animal-human boundary and the anxieties surrounding it. This dissertation contributes to the emerging field of animal studies yb examining otogizoshi (Muromachi/early Edo illustrated narrative fiction) concerning elationshipsr between human women and male mice. The earliest of these is Nezumi no soshi ("The Tale of the Mouse"), a fifteenth century ko-e ("small scroll") attributed to court painter Tosa Mitsunobu. Nezumi no soshi was followed roughly a century later by a group of tales collectively named after their protagonist, the mouse Gon no Kami. Unlike Nezumi no soshi, which focuses on the grief of the woman who has unwittingly married a mouse, the Gon no Kami tales contain pronounced comic elements and devote attention to the mouse-groom's perspective.

The folk culture permeating this region is a common creation produced by long-term interactions among the islands via the Kuroshio Current, starting with primordial sea imagery. Jeju, on the last branch of the Kuroshio Current, was positioned to embrace the cultures of the Korean Peninsula, the Japanese archipelago, and north and south China. Jeju’s people had opportunities to absorb oceanic culture, such as oceanic beliefs, myths, and rituals that moved along the maritime route. However, Jeju’s historical political relations, such as conflict, negotiation, conquest, and submission, shaped and supplemented the maritime traditions. The religious system slowly changed over time, and yet the islanders maintained a sense of identity derived from the ocean. This collective identity relates to the fact that many elements of the Kuroshio oceanic cultural sphere simultaneously existed on various small regional islands across the region.
