    TASTES FROM HOME Recipes from the Refugee Community PREFACE In writing the articles for this cookbook, I had the privilege and pleasure of speaking with refugees from all over the world who now call Canada home. Sometimes we had the good fortune of meeting in person, but because this project originated during the 2020 pandemic, often we spoke over the phone or through a video call, each of us holed up in our homes. They shared their stories, and they shared their recipes. From one foodie to another, the excitement and pride each person felt about their recipes was palpable. For many, the recipes hold a personal connection to a family member or to a memory, and the food is an indisputable connection to their culture. Each person has a unique story, with different outlooks, challenges, and rewards, but I was struck by one thing they all had in common—a desire to give back to Canada. From the Mexican restaurant owner who plans to employ dozens of Canadians, to the Syrian entrepreneur who donated the proceeds from his chocolate factory to Canadians impacted by wildfires, to the former Governor General who became a figurehead for the country, each person expressed profound gratitude and an eagerness to help the country that took them in. We often hear about refugees in abstract faraway terms, through statistics about the number of people fleeing from one country to another, but in speaking with these 14 people those statistics became humanized and the abstract became real experiences. Their stories are captivating, their recipes are mouthwatering, and I hope you enjoy both in the following pages.

Significant changes (P<0.05) in physicochemical parameters attributa- ble to moisture loss, as well as changes in colour and textural properties were observed during the fermentation and ripening stage. Proteolysis and lipolysis, coming as a result of endogenous enzymatic activity and high lactic acid bacteria and staphylococci counts, contributed to specific organoleptic properties of the final product. Sensorial profiling showed a significant (P<0.05) acid taste, lactic acid odour and flavour intensity, and low fat/lean ratio and smokiness and saltiness values. The region of Gollobordo, located in Eastern Albania and bordering the Republic of Macedonia, is of particular interest for conducting ethnobiological studies, since it remained relatively isolated for the larger part of the 20th Century and is traditionally inhabited by a majority of ethnic Macedonians and a minority of Albanians (nowadays both sharing the Muslim faith). Methods: An ethnobotanical survey focused on local food, medicinal, and veterinary plant uses was conducted with 58 participants using open and semi-structured interviews and via participant observation. Results: We recorded and identified 115 taxa of vascular plants, which are locally used for food, medicinal, and veterinary purposes (representing 268 total plant reports). The Macedonian Traditional Ecological Knowledge (TEK) was greater than the Albanian TEK, especially in the herbal and ritual domains. This phenomenon may be linked to the long socio-cultural and linguistic isolation of this group during the time when the borders between Albania and the former Yugoslavia were completely closed. Moreover, the unusual current food utilisation of cooked potatoes leaves, still in use nowadays among Macedonians, could represent the side effect of an extreme adaptation that locals underwent over the past century when the introduction of the potato crop made new strategies available for establishing stable settlements around the highest pastures.

Although some antipasti are as elaborate as French hors d’oeuvres and Spanish tapas, this tradi- tional recipe is refreshingly simple. Simplicity, however, requires quality. Use only the freshest mozzarella and, if possible, artisan soppressata. Commercial salami is riskier. Bismarck’s grim joke about sausages and democracy remains all too valid. The U.S. Department of Agriculture forbids the import of Italian soppressata, but the best domestic brand is Columbus. The company’s Farm to Fork program guarantees freshness. I NGREDIENTS • 1 pound Abruzzese soppressata, sliced into ¼ inch-thick coins • 1 pound fresh mozzarella medallions • 1 pound Sicilian green olives (stuffed with garlic) D IRECTIONS 1.
