I thank John McCauley for sharing his data on religious identification along the Côte d’Ivoire-Burkina Faso border and Anoop Sarbahi for his help assembling the GPCP rainfall data. The arbitrary nature of Africa’s borders is well known.1 Less well recognized is the opportunity that these arbitrary borders provide for social science research. This paper describes some of the shortcomings of traditional, observational studies and shows how natural experiments can provide for more reliable inferences about causality. The paper then draws on examples from three different projects to illustrate how the artificial nature of Africa’s borders can be used as a source of natural experiments. The Quest for Causal Inferences in Social Science Research In the social sciences, researchers typically make causal inferences through observational studies. These are analyses where the variables that the researcher is studying acquire their values through the unfolding of real-world events that are outside the researcher’s control (Collier et al 2004). The problem with observational studies is that they make it difficult or impossible to rule out the possibility that other, unmeasured variables may be the cause of the observed relationship between the variables of interest. Suppose, for example, we are interested in the linkage between smoking and cancer. -

EATING ON THE ROAD FOR WRESTLERS Although maintaining good nutrition during travel is challenging, it can be accomplished. Below are some tips to help you choose your meals wisely when away from home. Eating at Fast Food Chains 1. Select grilled, charbroiled, or roasted sandwiches, but make sure to remove the skin. 2. Order lettuce, tomato, onion, mustard, ketchup, relish, or salsa on your sandwich and hold the mayo, oils, and cheese. 3. Avoid ordering the meal combo – it’s usually more than you need! 4. Go for the grilled chicken salads, but ask for low-fat dressing such as vinaigrette on the side. 5. Order a regular hamburger instead of a jumbo or multiple stacked burgers. 6. Skip the sugary sodas, and instead go for skim/low-fat milk, water, or 100% fruit juice. 7. Choose the small yogurt parfait instead of the milkshake or ice cream sundae. 8. Special order your meals! Most establishments will make your meals made to order! 9. Order the 6 inch sub and skip the oil and mayo and double up on the meat and add extra veggies! 10. Select a baked potato instead of French fries and dress it up with salsa, veggies, low-fat butter substitute or low-fat sour cream! 11. Avoid any items that are breaded, fried, have a “secret sauce”, or have multiple layers. These usually have an outrageous amount of fat, cholesterol, and sodium! 12. Know what you are eating- look at the online nutritional information for each fast food restaurant. Eating at Restaurants 1. Do your research ahead of time. -

Jamie Kennedy One of Canada’s most celebrated chefs, Jamie Kennedy is known for his legendary commitment to environmental issues and his support for organic agriculture, local producers and traditional methods. This translates into choices about the fish we buy, the meat and vegetables we serve and increasingly the wines we choose to offer. Jamie makes every effort to minimize the impact of our operations on the environment and we are continuously on the look out for like-minded suppliers and better methods of work. His respect for traditional practices exerted its influence early on in Jamie Kennedy’s culinary endeavors, precipitating his decision to pursue an apprenticeship. Over the course of three years, Jamie worked for one Chef, under whose tutelage he learned basic kitchen skills, including how to manage staff and strike a balance between life and the demands of being a Chef. Having graduated from the apprenticeship program at George Brown in 1977, Jamie finessed his training and experience as Journeyman Cook in Europe from 1977 to 1979. In this ever- evolving learning environment, Jamie experienced what he describes as “a gradual awakening to gastronomy”. The Restaurants of Jamie Kennedy Returning to Toronto, Jamie opened what is now one of Toronto’s most renowned and respected restaurants, Scaramouche. Modeled on the French three-star system, Scaramouche was heralded as a new phase in Canadian culinary history and solidified Jamie’s reputation as a pioneer of contemporary Canadian cuisine. However, it was not until 1985 when he opened Palmerston Restaurant and established relationships with a number of local artisan producers that Jamie began to identify and develop what would become his own definitive style. -

MCCAULEY AND DANIEL N. POSNER* Under what conditions does religion become a salient social identity? By measuring religious attachment among the people living astride the Burkina Faso–Côte d’Ivoire border in West Africa, an arbitrary boundary that exposes otherwise similar individuals to different political contexts, this article makes a case for the importance of the political environment in affecting the weight that people attach to their religious identities. After ruling out explanations rooted in the proportion of different religious denominations, the degree of secularization and the supply of religious institutions on either side of the border, as well as differences in the degree of religious pluralism at the national level, it highlights the greater exposure of Ivorian respondents to the politicization of religion during Côte d’Ivoire’s recent civil conflict. Methodologically, the study demonstrates the power – and challenges – of exploiting Africa’s arbitrary borders as a source of causal leverage. For some, religion is the defining characteristic of who they are; their politics and perspectives on the world are inextricably bound up in their faith. For others, religious group membership is merely one social attachment among many; their attitudes and behavior are little affected by their religious affiliation. -

Fast Food Advertising: Billions in spending, continued high exposure by youth J U N E 2 0 2 1 Fast-food consumption among youth remains a significant public health concern. The findings in this report demonstrate that fast-food advertising spending increased from 2012 to 2019; youth exposure to TV ads declined, but at a lower rate than reductions in TV viewing times; many restaurants continued to disproportionately target advertising to Hispanic and Black youth; and restaurants did not actively promote healthier menu items. Restaurants must do more to reduce harmful fast-food advertising to youth. B A C K G R O U N D Excessive consumption of fast food is linked to poor diet and weight outcomes among children and teens,1 and consumption of fast food has increased over the past decade.2 On a given day, one-third of children and teens eat fast food, and on those days they consume 126 and 310 additional calories, including more sugary drinks, compared to days they do not eat fast food.3 Moreover, fast food consumption is higher for Hispanic and non-Hispanic Black teens, who also face greater risks for obesity and other diet-related diseases, compared to non-Hispanic White teens. 4, 5 While many factors likely influence frequent fast-food consumption,6-8 extensive fast-food advertising is a major contributor.9 Frequent and widespread exposure to food marketing increases young people’s preferences, purchase requests, attitudes, and consumption of the primarily nutrient- poor energy-dense products promoted.10-12 Fast food is the most frequently advertised food and beverage category to children and teens, representing 40% of all youth-directed food marketing expenditures 13 and more than one-quarter of food and drink TV ads viewed14. -

“Steak, Blé D'inde, Patates”
SANDRA ROY “Steak, Blé d’Inde, Patates” Eating national identity in late twentieth-century Québec This paper explores the connections between pâté chinois and Québec national identity during the second half of the twentieth century. The respective French, British, and Native roots of the ingredients are highlighted and discussed, with a particular emphasis on socioeconomic and cultural terms that also extends to the analysis of the historical preparation of the layered meal, more akin to “daily survival” than to gastronomy. Special attention is also given to the significance of the dish’s origin myths, as well as to cultural references on a popular television series. Those origin myths are separated along the French/English divide, thus evoking the often- tempestuous relationship between these two languages and their speakers in Québec. The progression of the discourse surrounding pâté chinois, from a leftover dish prior to the rise of nationalism in the ’70s, to a media darling in the decade following the 1995 referendum, corresponds with efforts to define and then to redefine Québécois identity. The history of the dish tells the tumultuous history of the people of Québec, their quest for a unique identity, and the ambiguous relationship they have with language. Pâté chinois became a symbol, reminding French Canadians of Québec daily of their Québécois identity. The classic recipe is simple: cooked ground beef at the bottom, canned corn—blé d’Inde—in the middle, mashed potatoes on top, warmed in the oven for a few minutes.1 Grandma did it differently: she mixed all the ingredients together without putting them in the oven. -
