Champagne and Sparkling Wine

I drink champagne when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty.

Champagne – Dom Pérignon ‘Oenothèque’ Collection

0041. 1964 Cuvée Dom Pérignon, ‘Oenothèque’ 12.5% £ 3150.00 On the nose the ampleness is amazing, revealing a host of aromas ranging from toasted bread to vanilla, raisins and hazelnuts. On the palate the structure is generous without ostentation. A touch of vanilla and spicy nuances of nutmeg gives way to very persistent notes of dried fruit, remarkable for its richness and complexity.

0042. 1973 Cuvée Dom Pérignon, ‘Oenothèque’ 12.5% £ 2250.00 The golden rays of summer sun of 1973 shine in the depths of this Champagne. Aromas of dry leaves and hints of toast, brioche and ripe Mirabelle plums make the bouquet and finishes with a hint of lemon.

0044. 2000 Cuvée Dom Pérignon, ‘P2 - 2me Pléntitiude’ 12.5% £ 1150.00 The bouquet is ripe, lively and generous. The warm aromas of hay and brioche mingle with those of bergamot orange and russet stone fruit. The vibrant opening strikes the first chord, a prelude to a complexity that is more tactile than plump, and only gives itself gradually. The distinguished viscosity is understated and simply fits around the contours of the wine. The length is exquisitely bitter and abounds with sap, a mingling of liquorice and toasted malt.

Bin End – Once it’s Gone, it’s Gone Rare Finds & Fine Wines

France – Bordeaux – Médoc

Pauillac 1711. 1961 Château Lator, 1er Grand Cru Classé, 12.5% £ 7350.00 3750.00

A late frost in May 1961 in Bordeaux meant that the vintage was very concentrated, with the vines channelling all their energy into a small number of surviving and thick-skinned bunches. Every Château experienced major losses with Chateau Latour making 65232 bottles. Chateau Latour is believed to be the wine of the vintage from a remarkable year. It was one of Michael Broadbent’s rare six-star wines -€ ‘immense, impressive and beautifully balanced’€ – when first tasted in 1968, while through the 1970s he noted its ‘great depth of colour, concentrated magnificence, richness and length’; and more recently, ‘a mammoth wine, all the component parts excessively represented’. Clive Coates MW, author of The Wines of Bordeaux, gave the wine a perfect score in 2003, proclaiming: ‘Splendid depth and concentration of fruit… A big but velvety wine… Really aristocratic. Still amazingly youthful. Brilliant. Great.’

France – Burgundy – Côte de Nuits

Romanee-St-Vivant 1504. 1988 Domaine de la Romanée Conti, Grand Cru, 13% £ 2550.00 1250.00

Often referred to in Burgundy simply as ‘The Domaine’, Domaine de la Romanée Conti produces only Grand Cru wines. These, especially the monopoles of Romanée-Conti and La Tache are considered amongst the best wines in the world and due to their scarcity command very high prices. Romanée-St-Vivant have an average production of 1500 cases per year.

Romanée-St-Vivant is named after the old abbey of St Vivant and is the closest vineyard to the village of Vosne-Romanée. DRC have managed the 5.28 hectare site from 1966 on behalf of the Marey-Monge family and as owners from 1988 after a rumoured 60 million Franc buy-out. Romanée-St-Vivant is the most feminine of the DRC stable.
