When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty. ~ Madame Lilly Bollinger Champagne - Non Vintage 0004. Collect, Brut 12% £ 70.00 0005. Laurent Perrier, Grand Siècle, Brut, 12% £ 350.00 0007. On the palate the structure is generous without ostentation. A touch of vanilla and spicy nuances of nutmeg gives way to very persistent notes of dried fruit, remarkable for its richness and complexity. 0042. 1973 Cuvée Dom Pérignon, ‘Oenothèque’ 12.5% £ 2250.00 The golden rays of summer sun of 1973 shine in the depths of this Champagne. Aromas of dry leaves and hints of toast, brioche and ripe Mirabelle plums make the bouquet and finishes with a hint of lemon. 0044. 2000 Cuvée Dom Pérignon, ‘P2 - 2me Pléntitiude’ 12.5% £ 1150.00 The bouquet is ripe, lively and generous. The warm aromas of hay and brioche mingle with those of bergamot orange and russet stone fruit. The vibrant opening strikes the first chord, a prelude to a complexity that is more tactile than plump, and only gives itself gradually. The distinguished viscosity is understated and simply fits around the contours of the wine. The length is exquisitely bitter and abounds with sap, a mingling of liquorice and toasted malt.
