There are several different types of pimm’s and for the warmer weather, we decided to spend the summer in passion with a tropical getaway take on the classic using a light and easy pineapple passion syrup, perfectly balanced with fresh lemon juice, Smirnoff Russian Vodka to give her a kick and of course, Pimm’s #1. To effervesce, we topped with a bubbly ginger ale. Bubbly, fresh and super British (most popular in England). - Circa 1823, James Pimm (In collaboration with the Brickyard 2016) - THE LIVENER Maison Rouge VSOP • Raspberry Syrup • Lemon Juice • Grandial Blanc de Blanc At first look, you can see similarities between the Livener and a Daisy. To be fair, it does fit the general profile of a daisy, yet as our friends at Dead Rabbit, NY have stated “Welcome innovation: Champagne”. Taking a page from their book, almost literally, we use an outstanding cognac and pair it with fresh raspberry syrup, lemon juice and blanc de blanc. It the addition, we happened to slip in some absinthe and rose flower water...oops… Delightfully light, bubbly and refreshing French 75 meets Daisy meets Dead Rabbit meets Brickyard. - Circa Charlie Paul, Recipes of American & other Iced Drinks, 1902 - STIRRED TOMMY’S MARGARITA Orange Agave Nectar • Blanco Tequila • Citric Acid • Saline • Lime Zest This margarita is a variation from San Fran, that replaces the orange liqueur with agave nectar. We somewhat blend the two, to make a hybrid using premium Blanco Tequila, orange agave syrup (house made, infused with orange zest) but here is where we get interesting... Instead of using lime, we use a citric acid to balance the cocktail. To make it feel more traditional we add in a saline solution for the brine, leaving no need for a silly salted glass and finish the cocktail with Lime zest for aromatics over a wonderful whiskey rock. ¡Salud! - Circa 1965, Julio Bermejo - ***Sub Mezcal for +$1*** * C o n s u m i n g r a w o r u n d e r c o o k e d m e a t s , p o u l t r y , s e a f o o d , s h e l l f i s h , e g g s o r u n p a s t e u r i z e d m i l k m a y i n c r e a s e y o u r r i s k o f f o o d b o r n i l l n e s s . SHARE YOUR EXPERIENCE: @BRICKYARDDWTN 3 THE CLASSICS $ 1 0 CAIPIRINHA Novo Fogo Cachaca • Lime Wedges • Demerara Sugar A cocktail hailing from Brazil. A unique, earthy, dry citrus version of a daiquiri that involves muddled lime, balanced with demerara sugar & Cachaça (a rum distilled from fresh sugarcane juice as opposed to refinery by-products i.e. molasses). Although a widely celebrated cocktail in Brazil, the origins are relatively unknown. One account has the cocktail dating to 1918 - using original ingredients with the addition of garlic as a cure to the Spanish Flu. As a summer-time sipper, we recommend avoiding the flu & jumping into a refreshing beverage the doctor literally ordered! - Circa 1918, Sao Paulo - LAVENDER BEE’S KNEES Citadelle Gin • Lavender Honey • Lemon Juice The Best! What other cocktail would dare to bee so bold to claim the title… This cocktail is simple using gin balanced with lemon juice and honey syrup. This cocktail offered a light refreshing and round cocktail to those who didn’t much care for the taste of gin...at this point bathtub gin. What’s truly interesting is that honey, an everyday ingredient was thought odd in cocktails throughout the prohibition... So to celebrate the odd side, we infuse our honey with lavender to give the cocktail a deeper, herbal twist. - Circa Prohibition, Good Ol’ USA – DELICIOUS SOUR* Mellow Corn BIB • R&W Apricot • Lemon Juice • Honey • Egg White This cocktail absolutely lives up to it’s name. Playing with the original ingredients of lemon juice, honey, egg white and stone fruit, we modify the cocktail slightly by switching out the applejack for another American staple...Bourbon! This cocktail absolutely lives up to it’s name, through keeping a round, velvety mouthfeel, to staying light citrusy and quite frankly, boozy. This cocktail is 100% Delicious - Circa 1892, William “The Only William” Schmidt - THE LIBERAL Mellow Corn BIB • Ramazzotti Amaro • Martelletti Sweet Vermouth Not referring to the political party but to the sense of liberal with use or lacking moral restraint. This brother of the borough cocktails (Manhattan, Brooklyn, Green Point, etc) uses an outstanding combination of high proof bourbon, Italian sweet vermouth, Ramazzotti amaro & orange bitters to create a complex, forward & delightful cocktail. A staple cocktail to sitting on the beach, famously made by Don the Beachcomber to help a hung-over guest to get through a business meeting, yet returned to complain that he felt like a zombie the entire trip… Probably has to do to the high alcohol content and how easy it is to drink… We take the passionate, well balanced Don Julio Blanco and create a zombie variant, adding in falernum and bruleed chartreuse for a herbal balanced, yet still tropical, kick! CANE YOU FEEL THE LOVE - $12 Wray & Nephew • Coconut Hine Coconut Cream •Lime • Pineapple Passion • Fernet If you can’t feel the love after this cocktail...you might not be doing it right.
