Clos du Soleil produces ultra-premium quality wines, borrowing an aesthetic derived from the great wines of Bordeaux, but stamped with the flavours and aromas of their particular piece of rocky Similkameen land. Through traditional winemaking techniques, informed by research, but adhering to the philosophies of minimal-interventionist winemaking and biodynamic viticulture, they produce wines that are complex and classic, ageable and elegant. Clos du Soleil Rosé, malbec 15 2020 Similkameen Valley, British Columbia, Canada The Malbec grapes for this Rosé were grown specifically for this wine, on a steep southern- facing slope of Clos du Soleil’s La Côte Vineyard on the Upper Bench of the Similkameen Valley. From a winemaking perspective the focus was on gentle-handling of the juice and wine, to protect the beautiful flavours and aromas of wild strawberries, cranberries, ripe cherries, and lime zest. Clos du Soleil La Côte Vineyard Viognier, viognier 15 2020 Similkameen Valley, British Columbia, Canada The grapes for this wine were grown in Clos du Soleil’s “La Côte” vineyard, on the Upper Bench of the Similkameen Valley (vineyard in transition to organic status). The grape clusters were harvested by hand at peak maturity, and then pressed very gently, whole cluster. After a brief settling, the juice was fermented in old, neutral puncheons of French oak, and then aged in those puncheons, on the lees for 6 months. The perfumed nose is full of ripe fruit: peaches and nectarines, pineapple and mango, with notes of wild flowers. Clos du Soleil Capella, sauvignon blanc/sémillon 16 2019 Similkameen Valley, British Columbia, Canada Each vineyard block was separately harvested, by hand, at peak maturity. The grapes were whole-cluster pressed, and then fermented entirely in barrel (82% French oak puncheons, 18% stainless steel barrels) with the majority undergoing only wild, spontaneous fermentation. One quarter of the barrels were also allowed to undergo wild malolactic fermentation. All lots were barrel aged for nine months, on the lees, with lees stirring. The final wine was created by blending together just the very best barrel lots, in order to create a wine of true complexity and elegance. Clos du Soleil Middle Bench Syrah, syrah 16 2017 Similkameen Valley, British Columbia, Canada Hand-harvested at peak maturity, the grapes for this wine were very gently de-stemmed, crushed, and then fermented in small-lot open top fermenters for a full month with daily manual punchdowns before pressing. It was then aged for 16 months in French oak barrels with 12% new oak. As in all Clos du Soleil wines, the focus was on attention to detail, minimal interventions, and the expression of terroir. With a full mouthfeel structured on a backdrop of stony tannins, this exclusive and limited-production Syrah is an opportunity to see another side of Clos du Soleil. 5 .     Château de Beaucastel Châteauneuf-du-Pape Rouge 2018 THE VINTAGE The 2018 vintage is characterized by exceptional weather conditions. Flowering took place in the best possible conditions, with a historically abundant grape output. A few rainy episodes at the end of the spring complicated things a little with an attack of mildew, but the good weather then settled down until harvest, which took place under idyllic conditions. The wines are beautiful. DESCRIPTION Château de Beaucastel has long been regarded as one of the greatest wines in France. It is notorious for its elegance, balance, and aging potential. Beaucastel has an exceptional terroir at the northern limit of Châteauneuf-du-Pape, exposed to the Mistral wind. All 13 varieties of the appellation have been organically grown since the 1960s. SITUATION Châteauneuf-du-Pape, between Orange and Avignon, Château de Beaucastel red is a 70-hectare (173-acre) vineyard. TERROIR Château de Beaucastel is 110 hectares (272 acres), with one single plot at the north of the appellation. The terroir is archetypal of the best terroirs in Châteauneuf: rolled pebbles on the surface, sand, clay, and limestone deeper down. The vines are old and have been organically grown for 50 years, which has allowed the roots to grow exceptionally deep. Beaucastel grows all 13 grape varieties authorized by the appellation. PROCESS Each variety is harvested separately and manually. Vinification takes place in oak fermenters for the reductive varieties (Mourvèdre, Syrah) and in traditional enameled concrete tanks for the oxidative grapes (all the others). Once the malolactic fermentation is finished, Famille Perrin blends the different varieties.

    CELLAR MASTER WINE CLUB September 2020 2012 Xavier Vignon Cuvee Anonyme Châteauneuf-du-Pape, France As the technical director and head enologist at “Laboratoire Avignon Oenologie Con- seil,” Xavier Vignon is the consulting winemaker at more than 300 estates, including most of the best-known domaines in Châteauneuf-du-Pape. In lieu of payment for his laboratory’s service, he sometimes accepts wine, which the micro-négociant com- pany he established in 2002, “Xavier Vins,” uses to produce exceptional wines of the southern Rhône Valley. Originally a physical chemist, Xavier is particularly interested in how the spectrum of dissolved mineral salts in the groundwater of each vineyard, which varies from parcel to parcel, influences the expression of terroir in the grapes. “I’m a trained enologist,” he says. “I’ve examined wine down to the molecular level. Which, in the end, convinces me that what is most important are the vines, the depth of the roots, and the health and balance of the vineyard.” Using a combination of skills, Xavier Vignon has established himself as both a mer- chant and winemaker. Since 2002, Xavier has worked as a negociant, gathering the very best grapes produced by top growers to make his own Xavier Vins line. Since he’s an enologist he has the knowledge and experience needed to navigate vineyards and produce high-quality wines of different varieties. He produced his first Xavier Vins vintage in 2007. Today, they continue to produce their wines at Chateau Husson in Courthezon, France. In addition to producing wines in the Chateauneuf du Pape appellation, he also creates wines in Gigondas and villages in the Cotes du Rhône.

It is unanimously renowned for its balance, elegance and ageing potential. Beaucastel has an extraordinary terroir at the Northern end of the appellation with heavy exposure to the Mistral. All 13 varieties of the appellation have been organically grown here since the sixties. THE VINTAGE An exceptional vintage, A hot summer with cool nights until the end of the harvest. LOCATION Châteauneuf du Pape, between Orange and Avignon, Château de Beaucastel red is a 70-hectare vineyard. TERROIR Château de Beaucastel is 110 hectares, with one single plot at the north of the appellation. The terroir is archetypal of the best terroirs in Châteauneuf: rolled pebbles on the surface, sand, clay and limestone deeper down. The vines are old and have been organically grown for 50 years, which has allowed the roots to grow exceptionally deep. Beaucastel grows all thirteen grape varieties authorised by the appellation. AGEING Each variety is harvested manually and separately. Vinification is completed in truncated oak barrels for the reductive grapes (Mourvèdre and Syrah) and in traditional tiled cement tanks for the oxidative grapes (such as Grenache). After the malolactic fermentations, the Perrin family blends the different varieties and then the wine ages in oak Foudres for a year before being bottled.
