How to make Boxty

Ingredients 1 cup of grated raw 1 cup of 2 tsp. baking powder ½ tsp. salt Black pepper, to taste 2 eggs, lightly beaten 1 cup of leftover ½ cup of whole milk Oil or butter for frying

Method

1. Place the grated raw potato in a clean tea towel or several layers of kitchen paper, and twist to remove as much moisture as possible.

2. In a bowl, whisk together the dry ingredients: flour, baking powder and salt. Season to taste with black pepper.

3. Add the eggs, mashed potato and raw potato and stir everything until just combined.

4. Gradually stir in the milk. Your batter should be thicker than regular batter. If it’s too thick, add an extra tablespoon or two of milk. This allows the flour to absorb more of the liquid, which makes your more tender.

5. Heat two tablespoons of oil or butter in a frying pan over a medium-low heat. Drop spoonful’s of batter into the hot pan to make pancakes about 8 cm in diameter. Flatten them gently with the back of a spoon.

6. Cook for 8-10 minutes on each side until golden brown. You will know it’s time to flip the pancake when you see lots of little bubbles form and pop.

Serve your Boxty with just a sprinkling of salt and pepper – or why not try one of the other delicious serving suggestions below?

 Sprinkle with finely chopped chives.

 Top with crumbled crispy cheddar cheese, scallions and sour cream.
