ORGANIC Sydre Brut, Eric Bordelet Cider

Classic dry cider, tender & mellow yet also lively with plenty of acidity, extremely refreshing. 750ml 22 Cyril Zang Cidre Brut “Cidre2Table” The age of the orchards: from 15 to 60 year old. 69 different varieties of apples (sweet, bittersweet, bitter, slightly acidic, sour). Apples are hand-picked between early October to mid-December. Separated by variety and stored in a barn to continue ripening for up to 6 weeks. Apples are then grated to create a marc. Pressing through hydraulic press. The amber-coloured apple juice is transferred to vats and racked during the 6 months long fermentation process. The unfiltered cider is bottled with no sulfites added and stacked horizontally for 2 to 3 months to capture sparkle. Bottles are then stored on a A-frame wooden racks and turned regularly for 3 weeks in order to be disgorged. Disgorgement is made manually, and removes naturally all the sediment in the bottles. Each bottle is then topped up with the same cider, without anything else added. 750ml 25

GYLE 59 Thorncombe, Dorset – A fantastic array of bottled conditioned beers produced by Jon and Amanda Hosking.

They’re natural (unfined) so there’s no Isinglass finings used in the filtration process. This means that often the beer will appear hazy or cloudy. As there is no Isinglass, which is made from the swim bladders of fish, the beers are suitable for anyone to enjoy whether omnivorous, vegetarian or vegan!

France, 12% Mise du Printemps Pinot Blanc Josmeyer, natural wine, low sulphur wine, fresh and light summer white. Josmeyer natural wines really are the best of Alsace. The nose is fine and delicate opening on white flowers and apple blossom notes with a light touch of white peach. The palate is fresh, soft and very moreish. Notes of fruits with a fleshy side. The finish is firm with a nice racy acidity. A real wine of pleasure. Nothing to add, sit back and enjoy. 30 Sauvignon Blanc 2017, Les Boucauds, Claude Riffault, Sancerre. France, 13% A complex expression from one of the most exciting estates in Sancerre, a complex white wine that has a wide range of different aromas and flavours. It is full-bodied, fresh and well- balanced. 45

Good entry example. 30 Pinot Gris Reserve 2016, Trimbach, Alsace. France, 14% This family have been making wine for nearly 400 years, the wine is considered a benchmark reference for Pinot Gris. Trimbach is listed by all 26 of France’s 3 starred Michelin restaurants. 40

France, 14% Taken from vines planted over 50 years ago, this Côtes du Rhône Blanc is delightfully aromatic with notes of grapefruit, white peach and lemon mint. Fresh and elegant on the 35 palate. Sauvignon Semillon, Chateau Loudenne 2011, Medoc. France, 14% 35 Yellow in colour with an intense, powerful and complex nose. Peach and apricot. 26 Riesling 2018, Eva Fricke, Rheingau. Germany, 12% *VEGAN* This is a classic expression of the Rheingau, with fruit blended from the villages of Lorch, Eltville Hattenheim and Kiedrich. A juicier style of Riesling in comparison to Eva’s single site wines, this is wonderfully accessible in its youth. Perfumed with hints of white blossom and stone-fruit on the nose, the palate is bursting with apple and peach. 30 Gewurztraminer 2015, Cuvee des Eveques, Famille Hugel, Alsace. France, 14% Rich, aromatic & floral. This wine will unwind in your glass – goes with anything spicy. 40 Pecorino 2016, Gabriel, Poggio Anima, Terre di Chieti. Italy, 12.5% Pecorino is a very old grape but was only recently rediscovered and used for mono-varietal wines. Crystallized lime peel, nectarine and dry herbs on the nose. Juicy and lively with a 28 nice density conveying a dusty citrus zest character and an impression of orchard fruits. ORGANIC Riesling 2017, Kiedrich, Eva Fricke, Rheingau. Germany, 12% 28 A slew of citrus aromas here, from lemon-cream to grapefruit and orange. Richer and Weightier…

‘Vin Ordinaire’ 2016, Alphabetical, Western Cape, South Africa, 14% A scent here and there of stone fruits and mountain herbs as you lift the glass to your nose. 25 Madeleine Angevine 2014, Barrel Fermented, Sharpham Winery. Devon, 12% Rich, toasty and full bodied. This unique English wine shows baked apple, sour pineapple, vanilla and cream soda on the nose. The palate is slightly spiced with gooseberry flavours and a fresh acidity cutting through richer creamy notes. 30 Chardonnay 2017, Wild Boy, Jim Clendenen, Santa Barbara County. USA, 13.5% A rich, Burgundian-style Chardonnay from 1 of the best winemakers in California. The image on the label of this Chardonnay is meant to be a portrait of the genius behind Au Bon Climat - Jim Clendenen, self-proclaimed 'Wild Boy'. Au Bon Climat is renowned for producing Burgundy-style wines in the sunshine state of California and this is an excellent example. It is fuller and richer in style than Au Bon Climat's original Chardonnay, but there is still a fine balance between the ripe tropical fruit flavours, toasty oak and complex minerality and acidity. Beautifully smooth, flavoursome and nutty. 45

Red Wine Lighter, Fruity Wines with Lower Tannin…

Crunchy, Juicy Fruit…

This is a joyful Gamay. Unpretentious, juicy and easy drinking from Touraine, central Loire. A light pepperiness and a perfume of violet delicately emerge from the glass. France, 13.5% Gueule-de-Loup means wolf's mouth – the name of a common flower in the south of France. This wine is a biodynamic blend of mostly Grenache with a little Carignan, Cab Sav, Merlot, Syrah and a splash of Vermentino. France, 13.5% This cuvee spends 12 to 18 months ageing in French oak barrels, the well-integrated tannins first offer a silky palate to reveal a dense structure with liquorice and fruits of the forest. 30 Chateauneuf Du Pape 2013, Jean Paul Versino. France, 13.5% Pretty fruit, floral character and gentle complexity, notes of wild berries, hedgerow fruit, Victoria plum, sap and herb. Beautifully weighted, complete and bright through to the finish. 35 Cabernet Sauvignon, Merlot, Petit Verdot 2015, Ch Beaumont, Cru Bourgeois, Bordeaux. France, 14% Nose full of fresh red and black fruits with subtle hints of spice. The palate is beautifully balanced, with stunning rich black fruits and full, fine and ripe tannins. 35 Nebbiolo 2104, Barolo, Giovanni Rosso, Comune Di Serralunga D’Alba. Italy, 14% Aromas of kirsch and rose petal on the nose lead to a generous palate with lots of juicy red berry fruit. There is plenty of refreshing acidity and elegant tannins, with subtle notes of sweet spice and nutmeg. It is long, concentrated and delicious. 40 ORGANIC Syrah, Grenache 2016, Leon & Seraphin, Matthieu Dumarcher, S.Rhone. France, 12.5% Vin de France Leon et Seraphin Matthieu Dumarcher, Organic Wine, Syrah, Grenache, Cotes du Rhone of unrivalled freshness and drinkability, only 12.5% abv, so slightly bigger than the previous year but still worlds away from those heavy, 14.5% wines you often associate with southern Rhone! Leon et Seraphin has a lovely cosy texture and fresh red berry palate. The type of Cotes du Rhone you want to drink and drink. Matthieu Dumarcher created his own estate in 2006 in the Drome, a lesser known wine-producing region in the mid-Rhone. He wanted to hand make wines whilst reflecting the unique terroir and differences in the years. The whole estate is run according organic principles, with natural yeasts and a minimum of sulphur at bottling. 30

Spicy red fruit and liqueur cherry aromas are complimented by classic dusty leather and thatch notes. The palate is full and rich with racy red berry flavours and chalky tannins. 30
