In this study, we analyzed the relationship between polyphenols and bitterness as well as the composition of the main styles of craft beers and consumer preference for them. Six different styles were analyzed according to their polyphenol content, bitterness, chemical composition, sensory profile, and preference.     TRUE BREWTM INGREDIENT KIT Prepare your Bottles and Caps: Clean and sanitize the bottles by either soaking the bottles in a chemical sanitizing solution or running the bottles through a dishwasher cycle without any detergent or rinsing agent. This will only work with a dishwasher that has a heat/dry cycle. Sanitize the caps by soaking INDIA PALE ALE them in a sanitizing solution. The Captain’s brew. Since 1979 the Brewers Association has provided beer style descriptions as a reference for brewers and beer competition organizers. Much of the early work was based on the assistance and contributions of beer journalist Michael Jackson; more recently these guidelines were greatly expanded, compiled and edited by Charlie Papazian. The task of creating a realistic set of guidelines is always complex. The beer style guidelines developed by the Brewers Association use sources from the commercial brewing industry, beer analyses, and consultations with beer industry experts and knowledgeable beer enthusiasts as resources for information. The Brewers Association's beer style guidelines reflect, as much as possible, historical significance, authenticity or a high profile in the current commercial beer market. Often, the historical significance is not clear, or a new beer type in a current market may represent only a passing fad and is quickly forgotten. For these reasons, the addition of a style or the modification of an existing one is not undertaken lightly and is the product of research, consultation and consideration of market actualities, and may take place over several years.     India Pale Ales In the early eighteenth century as Porters were becoming hugely popular in England, the British East India Company was establishing large colonies of merchants, tradesmen and British soldiers in India. And while England was busy building an empire on which the sun never set, demand for British beer was building in India. The sea voyage to India took ships to the south Atlantic, around the horn of Africa and finally to India on a journey that would typically last about six months. The changing temperatures and rolling seas wreaked havoc with the beer and the Porters typically arrived sour, stale and flat. The Royal Navy was eager to solve this problem and provide fresh, tasty beer for British soldiers and sailors, so they put the challenge in the 1780's to British brewers of the day to brew a beer that would last through the voyage to India. George Hodgson of the Bow Brewery in London surmised correctly that higher hop and alcohol levels would help to preserve his own Pale Ale through the difficult sea conditions, so he brewed a high hopped, high alcohol version of it that did the job, eventually earning the name India Pale Ale, or IPA for short. Hodgson's beer arrived in quite pleasant condition in India and soon other brewers like Bass followed suit, creating their own IPAs and the beer market in India exploded. As Hodgson brewed his beer well over 200 years ago, we cannot be completely certain what it tasted like, but it seems clear that his export version of an IPA was extremely bitter and very high in alcohol.
