    Generalità Spressa delle Giudicarie Spressa delle Giudicarie Prodotto esclusivamente nelle Giudicarie e in Val Rendena è uno dei più antichi formaggi della montagna alpina, frutto della tradizione casearia contadina che prevede la lavorazione casalinga del latte presso gli allevamenti del fondovalle, i fienili e i masi di montagna. Il nome deriva probabilmente da Spress, massa spremuta, poiché il latte con cui è prodotto questo formaggio subisce numerosi processi di scrematura. Da sempre è considerato, a ragione, un formaggio magro. Infatti i contadini un tempo smagravano il più possibile il latte per ottenere il maggior quantitativo di burro, allora ben remunerato, destinando, invece, il formaggio all'autoconsumo domestico. La Spressa delle Giudicarie prodotta ora, pur essendo sempre a basso tenore lipidico, non è magra come un tempo, ma è comunque in linea con le esigenze di una sana Presentazione alimentazione. Le sue eccellenti proprietà organolettiche derivano dal metodo di produzione tradizionale, tramandato da generazioni, dalle caratteristiche del foraggio con il quale si alimentano le bovine, dalle razze produttrici del latte utilizzato e, non ultimo, dall'ambiente alpino in cui si svolge l'intero ciclo produttivo. Il sapore è dolce, nel caso di prodotto giovane, saporito, più o meno accentuato per il prodotto stagionato, con un appena percettibile sapore amarognolo. L'odore e l'aroma sono quelli caratteristici dei formaggi di montagna, più decisi e marcati per il prodotto stagionato E’ un formaggio che va mangiato piuttosto giovane. Il suo sapore si sposa particolarmente bene alle altre specialità tipiche trentine come la polenta. Non a caso uno dei piatti tradizionali delle Valli Giudicarie è la polenta detta 'carbonera' che vede tra gli ingredienti fondamentali proprio la Spressa che va tagliata a listelli e amalgamata assieme a tutto il resto.

    La Strategia Nazionale per le Aree Interne e i nuovi assetti istituzionali AREA INTERNA O VAL DI SOLE V I PROVINCIA AUTONOMA DI TRENTO T A Z Z I N A G R O A E R A ' D R E I S S O D Nota introduttiva Le Aree Interne rappresentano una ampia parte del Paese. Si tratta di aree significativamente distanti dai centri di offerta di servizi essenziali (quali istruzione, salute e mobilità) ma ricche di importanti risorse ambientali e culturali, fortemente diversificate per natura e per processi di antropizzazione. Un quarto della popolazione italiana occupa queste aree, con un’estensione territoriale che supera il sessanta per cento del totale della superficie nazionale e interessa oltre quattromila comuni. Il Piano Nazionale di Riforma (PNR) ha individuato e messo in atto una Strategia che ha come obiettivo non solo la ripresa demografica, ma anche un miglioramento qualitativo di vita promuovendo per queste aree uno sviluppo intensivo (benessere e inclusione sociale) ed estensivo (lavoro e utilizzo di risorse locali) attraverso fondi ordinari della Legge di Stabilità e Fondi comunitari. La Strategia Nazionale per le Aree Interne, che coinvolge un quarto dei comuni classificati come aree interne, ha individuato e selezionato 72 aree progetto, ricadenti in ambiti territoriali omogenei, distribuite su tutto il territorio nazionale. Per esse si è avviato un processo di crescita e coesione territoriale. Il Dossier d’area organizzativo è un documento di sintesi (analitica e documentale) su alcune condizioni strutturali dell’area e sulle scelte che i comuni hanno effettuato per rafforzare la loro capacità di gestire i servizi pubblici locali e i progetti previsti dalla Strategia.
