PRODUCT SPECIFICATION FOR THE Cognac or Eau-de-vie de Cognac or Eau-de-vie des Charentes CONTROLLED APPELLATION OF ORIGIN Part 1 - Technical fact sheet A. ― Name of the controlled appellation of origin and spirit drink category 1. Geographical name Only wine spirits respecting the provisions detailed hereafter can legally lay claim to the Cognac or Eau- de-vie de Cognac or Eau-de-vie des Charentes controlled appellation of origin (hereafter referred to as Cognac), initially defined by French decrees dated 1 May 1909 and 15 May 1936. 2. Wine spirit category in keeping with Regulation (EC) no. 110/2008: The Cognac controlled appellation of origin corresponds to the “wine spirit” category defined in Annex II, point 4, Regulation (EC) No. 110/2008 of the European Parliament and the European Council dated 15 January 2008 on the definition, description, presentation, labelling and the protection of geographical indications of spirit drinks. This is included in annex III of the above regulation. B. ― Description of the spirit drink 1. Production and ageing methods a) The Cognac controlled appellation of origin is restricted to aged wine spirit, except for quantities intended for industrial purposes or compound products, which do not necessarily need to be aged.
