Created from four magnificently restored Listed Georgian townhouses, the grace and elegance of The Merrion’s interior provides the perfect setting for the paintings. The result is a dramatic and successful marriage of classical architecture and contemporary art. True to the spirit of 18 th century arts patronage, Martin Mooney, one of Ireland’s finest young painters, was commissioned to paint a series of works for the elegant neo- classical stairwell in The Merrion’s Front Hall. The Front Hall remains much as it would have been when the house was built in the mid 18 th century. Plain white walls show off the original cornices and plasterwork, leaving Mooney’s murals as the main decorative feature. These, in subtle, warm colours, depict imaginary classical ruins, buildings and architectural details. The pronounced architectural element of Mooney’s style is particularly apt for The Merrion’s Georgian interior. After attending the University of Ulster, Mooney studied at Brighton Polytechnic, followed by a Post Graduate Degree at the Slade School of Fine Art, London. His work has been widely exhibited in both one-man and group exhibitions at galleries including The Solomon Gallery, Dublin; Waterman Fine Art, London; Theo Waddington Fine Art, London; The Royal Academy, London and The Royal Hibernian Academy, Dublin. -

However, food producers and consumers frequently use this terminology for food products with few and recognisable ingredients. The meat industry faces important challenges in the development of clean-label meat products, as these contain an important number of functional additives. Nitrites are an essential additive that acts as an antimicrobial and antioxidant in several meat products, making it difficult to find a clean-label alternative with all functionalities. Another important additive not complying with the clean-label requirements are phosphates. Phosphates are essential for the correct development of texture and sensory properties in several meat products. In this review, we address the potential clean-label alternatives to the most common additives in meat products, including antimicrobials, antioxidants, texturisers and colours. Some novel technologies applied for the development of clean label meat products are also covered. BBQ & Smoking Techniques Indirect Grilling Indirect grilling is a critical technique for outdoor chefs, especially used in combination with other techniques such as searing. Simply stated, the fire should be in one part of the grill, and the food should be on the other. Indirect grilling can be done at any temperature, but is always done with the lid closed. With your grill prepared and preheated for indirect grilling, the area of the grilling surface directly over the flame will be hotter than the indirect cooking zone. At higher temperatures you can use the direct grilling zone to sear meats for a couple of minutes on each side, followed by the remaining cooking on the indirect zone. When using indirect heat for grilling thick cuts of meat (a 2-inch thick, bone-in pork chop requires about 30 to 35 minutes when grilling at 500 degrees with indirect heat), flip the meat every five minutes. Indirect heat can also be used for rotisserie cooking. Direct Grilling Direct grilling is the standard grilling technique, with the food directly over the flame. Direct grilling at high temperatures (over 800 degrees) will sear food. Lower temperatures (300 to 400 degrees) can be ideal for cooking meats and fish if you like a bit of char to the outside. Direct grilling can be used with indirect grilling techniques for longer cooking times in order to avoid burnt or dried out foods. Searing Searing meats with intense heat will help lock in juices and flavor, and is a recommended technique in combination with lower temperature techniques.
