I want to express my sincere gratitude to her for her guidance, support, and encouragement at Texas State University. I have been deeply influenced by Dr. Lu’s outstanding personalities — creativity, earnestness, persistence, and ambitiousness. She brought me to the frontier of food environment and health geography studies. I thank her for teaching me how to conduct scientific research, publish research papers with different journals, and respond to review comments through manuscript revisions. She shared with me without reservation her experiences on the various aspects of academic life, including teaching, scientific writing, and job searching. She also supported me to overcome the difficulty times and helped me fit in the department. Through the many conversations we had, she always encouraged me to stay true to my dream and not give up easily. Dr. Lu funded my dissertation survey; I could not have completed my research without her generous support. I also would like to thank my dissertation committee members: Dr. F. Ben Zhan, who gave me critical comments and helped me to improve my research; Dr. Russell Weaver, who helped me refine my research questions and recommended alternative statistical analysis methods; Dr. Tony Oyana, for his suggestions on my literature reviews and theoretical framework; Dr. Lesli Biediger-Friedman who assisted me in developing v the food survey instrument. I could not have completed my dissertation without their tremendous help and professional support. My special thanks go to the Department of Geography at Texas State University. I appreciate the finical support from our department for the past four years. I want to thank two faculty members especially Drs. Lawrence E. Estaville and Xingde Jia at Texas State University for their financial support in my fifth year. Many faculty members, including Drs.
