All rights reserved. 18HH31389 BOURBON An American Whiskey made primarily from corn. By law, bourbon must be made from at least 51% corn (the rest can be any grain but is typically a combination of rye or wheat and malted barley), aged in new, charred oak containers, distilled to no higher than 160 proof, and bottled at no less than 80 proof. Bourbon can be made anywhere in the United States. Because of its corn base, it tends to be a sweeter whiskey but can also be quite robust and full with vanilla and caramel flavors created by the use of new oak barrels. RYE Rye Whiskey follows the same rules for bourbon except instead of being made primarily from corn, it is made from at least 51% rye. Rye Whiskey tends to be a bit spicier and drier than bourbon. Fun Fact: Canadian Whisky is often referred to as rye, or even labeled as such, but isn’t legally required to have any rye in it at all. Most of the Canadian Whisky made today is made primarily from corn. TENNESSEE WHISKEY A whiskey that largely follows the laws of bourbon but enjoys a geographical designation of only being made in the state of Tennessee. Besides that, Tennessee Whiskey must undergo another step called the Lincoln County Process. This process involves dripping the newly made spirit over vats of sugar maple charcoal to further refine the whiskey. The finished product takes on a notably more fruit driven quality that separates it from bourbon. Due to the limited release of some of these products, availability may be limited. CANADIAN WHISKY This lighter style of whisky (Canadians drop the “e” like the Scots) is best described as being made up of several different grain distillates, blended together. Most of the whisky in what is known as the “grain bill” is made from corn. The use of the term “rye” for all Canadian Whisky was adopted as rye became a popular flavoring in the whisky blends. Often, little rye is added to these blends. There are few laws governing Canadian Whisky production outside of the requirement to be aged at least three years. While some Canadian Whiskies can be robust, many are light and delicate. IRISH WHISKEY The whiskey of Ireland can only be made on the island. It is primarily made from malted barley, like scotch, but can contain other grains as well. Irish Whiskey can come in single malt, pot still, grain whiskey or a blend of the varieties. Single Malt or Malted Irish Whiskey is made from barley, while the other styles can be made with other grains or corn. Irish Whiskey tends to be light in style with a sweeter grain profile. Due to the limited release of some of these products, availability may be limited. SCOTCH A Scottish Whisky (they drop the “e” in the spelling) is made from malted barley and aged in oak containers for at least three years. Malting is done by moistening the grain with enough water to make it want to grow. This releases the sugar stored inside, which is needed for fermentation. Once the grain has begun germination, the process is stopped using heat. In some parts of Scotland, peat is used as fuel for the fires that dry the barley. Not all scotch is made this way but the ones that are have a distinctive, smokey flavor. Scotch can range from being floral and delicate to bold and peaty and everything in between. Scotland has six regions of production (Highlands, Lowlands, Speyside, Campbeltown, the Islands, and Islay) and style can be, but isn’t always, relative to where it is made. Scotch can be bottled as a single malt from one particular distillery and 100% malted barley, a blended malt which is a blend of various single malts from different distilleries, or a blended scotch whisky which is a blend of several scotch whiskies made from barley and other grains. JAPANESE WHISKY Whisky produced in Japan is made in the Scottish style and tends to be the delicate, honeyed malts typical of the Lowlands and Speyside. Many whiskies from this isle nation have outranked their Scottish counterparts, a feat once thought impossible. Due to the limited release of some of these products, availability may be limited. SINGLE BARREL Whiskey bottled from one barrel chosen for its exceptional, unique quality. All whiskies are blended from multiple barrels to create a specific profile that is consistent from batch to batch. A single barrel whiskey will have the characteristics the distillery is known for and sometimes a whole lot more. Each barrel is unique and will only yield about 240 bottles. Even single barrel offerings from the biggest distilleries will have unique flavors that will vary from barrel to barrel. BARREL PROOF Also known as “cask proof,” whiskey carrying this designation is bottled at the proof it is when it is poured out of the barrel. Usually, before whiskey is bottled, water is added to lower the alcohol content or proof. American whiskey must enter the barrel at no higher than 125 proof. As it ages, water evaporates and the alcohol content gets higher. A barrel proof whiskey can sometimes be found as high as 140 proof. A higher proof whiskey will have a higher concentration of flavor. BOTTLED-IN-BOND The Bottled-in-Bond Act was passed in 1897 as a way to ensure consumers knew at least a few things about what was in the bottle of whiskey they were buying. To this day, a whiskey can print this on their label only if the whiskey inside is bottled at 100 proof, was made during one distilling season, by one distiller, at one distillery, was aged in federally bonded or approved warehouse, and bottled at the distillery it was made in unless otherwise noted on the bottle. STRAIGHT WHISKEY A straight American Whiskey carries a legal definition that guarantees the whiskey in the bottle is at least two years old and has no added color or flavorings. However, if a bottle uses this term on its label and is under four years old, the label must say so. Most straight whiskies on the market will not have an age statement on them so you know they are at least four years old.     The Whiskey Machine: Nanofactory-Based Replication of Fine Spirits and Other Alcohol-Based Beverages © 2016 Robert A. Freitas Jr. All Rights Reserved. Abstract. Specialized nanofactories will be able to manufacture specific products or classes of products very efficiently and inexpensively. This paper is the first serious scaling study of a nanofactory designed for the manufacture of a specific food product, in this case high-value-per- liter alcoholic beverages. The analysis indicates that a 6-kg desktop appliance called the Fine Spirits Synthesizer, aka. the “Whiskey Machine,” consuming 300 W of power for all atomically precise mechanosynthesis operations, along with a commercially available 59-kg 900 W cryogenic refrigerator, could produce one 750 ml bottle per hour of any fine spirit beverage for which the molecular recipe is precisely known at a manufacturing cost of about $0.36 per bottle, assuming no reduction in the current $0.07/kWh cost for industrial electricity. The appliance’s carbon footprint is a minuscule 0.3 gm CO2 emitted per bottle, more than 1000 times smaller than the 460 gm CO2 per bottle carbon footprint of conventional distillery operations today. The same desktop appliance can intake a tiny physical sample of any fine spirit beverage and produce a complete molecular recipe for that product in ~17 minutes of run time, consuming <25 W of power, at negligible additional cost.     The 25 Most Important Bourbons Ever Mad If you asked a spirits expert a quarter century ago to name the most important bourbons ever made, they might have wondered whether America’s home-grown whiskey deserved such analytical consideration. Bourbon was in the doldrums, unappreciated and underdrunk. But today, thanks to a boom that shifted into high gear around the turn of the century, bourbon is arguably the most talked-about, most obsessed-over and most in-demand spirit in the world. To better assess how we got here, we consulted with 23 bourbon experts, including distillers, journalists, authors, whiskey-bar owners and one whiskey-centric-liquor-store proprietor. Each participant named five to ten bourbons that made a difference—not their favorite bourbons, or the ones they thought tasted best, but those bottles that were influential, innovative or otherwise held a significant place in bourbon history. They were allowed to reach way back to pre-Prohibition years, cite bourbons they could never have tasted, and yes, in the case of distillers, include their own creations. (One self-serving endorsement would not land them a spot on this list, however, as every bourbon here received multiple votes.) The final order was determined strictly by the votes received. There were a number of ties in the lower rankings. In those cases, editorial judgment determined final rankings. In a few instances, the panelists indicated complete lines of bourbons that bore the same name, not just a single bottling. In other cases, panelists pointed out different bottlings within a single line. As the arguments behind these choices were often similar, these votes were sometimes combined and placed within the rankings as a bourbon label’s complete line.
