The Whiskey Machine: Nanofactory-Based Replication of Fine Spirits and Other Alcohol-Based Beverages © 2016 Robert A. Freitas Jr. All Rights Reserved. Abstract. Specialized nanofactories will be able to manufacture specific products or classes of products very efficiently and inexpensively. This paper is the first serious scaling study of a nanofactory designed for the manufacture of a specific food product, in this case high-value-per- liter alcoholic beverages. The analysis indicates that a 6-kg desktop appliance called the Fine Spirits Synthesizer, aka. the “Whiskey Machine,” consuming 300 W of power for all atomically precise mechanosynthesis operations, along with a commercially available 59-kg 900 W cryogenic refrigerator, could produce one 750 ml bottle per hour of any fine spirit beverage for which the molecular recipe is precisely known at a manufacturing cost of about $0.36 per bottle, assuming no reduction in the current $0.07/kWh cost for industrial electricity. The appliance’s carbon footprint is a minuscule 0.3 gm CO2 emitted per bottle, more than 1000 times smaller than the 460 gm CO2 per bottle carbon footprint of conventional distillery operations today. The same desktop appliance can intake a tiny physical sample of any fine spirit beverage and produce a complete molecular recipe for that product in ~17 minutes of run time, consuming <25 W of power, at negligible additional cost. AMERICAN BOURBON Bourbon is an American whiskey which contains a minimum of 51 percent corn, and is aged in charred, new oak barrels. The mandate that bourbon rest in only new oak barrels is a key reason why used bourbon barrels end up aging Scotch, amongst other products. PAGE2 What is Bourbon? “In brief, bourbon is a whiskey, made predominantly from corn and aged in new charred oak barrels. According to the United States government, bourbon sold in the United States must meet these requirements: 1. Made from a grain mixture that is at least 51% corn. 2. Aged in new charred-oak barrels. 3. Distilled to no more than 160 proof, or 80% alcohol by volume (ABV). In practice, most bourbon is distilled out at a lower proof than this. 4. Entered into the barrel for aging at a proof no higher than 125 (62.5% ABV). 5. Bottled at no less than 80 proof (40% ABV). Bourbon is, as noted, 51% corn. The remaining 49% includes other grains. Usually, those grains include wheat, rye, malted rye, and malted barley, in any combination. Some distilleries, though, have experimented with rice, oats, and other grains. Bourbon must be aged, but there are no specific requirements as to time. -

STATE OF TENNESSEE OFFICE OF THE ATTORNEY GENERAL March 18, 2015 Opinion No. 15-23 Tennessee Whiskey Question Does Tenn. Code Ann. § 57-2-106(c) violate any state or federal law, rule, or regulation or any provision of the Tennessee Constitution or the United States Constitution? Opinion Tennessee Code Annotated section 57-2-106(c) constitutes impermissible discrimination in violation of the equal protection provisions of the Fourteenth Amendment to the United States Constitution, as well as impermissible class legislation in violation of article XI, section 8, of the Tennessee Constitution. ANALYSIS In 2013, the General Assembly enacted Tenn. Code Ann. § 57-2-106 which prohibits an intoxicating liquor from being advertised, described, labeled, named, sold or referred to for marketing or sales purposes as “Tennessee Whiskey,” “Tennessee Whisky,” “Tennessee Sour Mash Whiskey,” or “Tennessee Sour Mash Whisky” (collectively hereinafter “Tennessee Whiskey”) unless the intoxicating liquor is: (1) manufactured in Tennessee; (2) made of a grain mixture that is at least fifty-one percent (51%) corn; (3) distilled to no more than one hundred sixty (160) proof or eighty percent (80%) alcohol by volume; (4) aged in new, charred oak barrels in Tennessee; (5) filtered through maple charcoal prior to aging; (6) placed in the barrel at no more than one hundred twenty-five (125) proof or sixty-two and one half percent (62.5 %) alcohol by volume; and (7) bottled at not less than eighty (80) proof or forty percent (40%) alcohol by volume. Tenn. Code Ann. § 57-2-106(a). Most of these requirements are based on the standards of identity for bourbon created by the Alcohol and Tobacco Tax and Trade Bureau. -

WHISKY / WHISKEY Defining Whisk(e)y in general The simplest explanation of what a whisk(e)y is could be broken down into "a grain spirit which has been matured on oak". Some whiskies are made out of only one grain, other whiskies require a specific blend of grains in order to produce the desired character and style. The word itself derives from the Gaelic words 'Uisge Beatha' which translates to 'water of life'. The spelling, adding the 'e' or not, differs from country to country and sometimes even between producers. As with many other spirits whisk(e)y is produced across the world in endless variations. The most common denominator that is covered by most laws and regulations would be the above distinction of a grain spirit matured on oak. Most whiskies are made up of a blend of different barrels of matured whisk(e)y (note that these blends could be from the same grain or not), either from one distillery or different distilleries. These are mixed to produce the desired character of a whisk(e)y and then bottled. In some cases however the producer chooses to bottle a specific barrel. These are often labeled as 'single cask' or 'single barrel'. There are a lot of other categories and labeling terms that refer to different styles and processes. The different categories and labeling terms will be covered under the relevant type of whisk(e)y in this chapter. In contrast to many other spirits which often only have one base material whisk(e)y can be made out of barley, corn, wheat, rye or a combination of these. -

WHISKEY COLLECTION Sip It Straight, Or Mix It 1810 Town Center Blvd, Fleming Island, FL 32003 APPRECIATING WHISKEY LOOK Before you do anything look at the whiskey, you can learn a lot from its color. Generally speaking the darker the whiskey, the older it is, because whiskey gets its color from contact with the oak barrel during aging. The type of barrel matters as well. For example a scotch whisky is being aged in a bourbon barrel that has been used several times, it's not going to pick up as much color from the barrel. If that same whisky was put in a used sherry or port cask, it will pick up some of those colors in addition to the oak barrel. SMELL Realize that you can smell more from your whiskey than you will ever be able to taste. Most master distillers and blenders work primarily by nosing, not tasting. So always smell your whiskey before you taste it. Don't shove your nose into the glass or the alcohol will be too dominant. Gently raise the glass to your nose until you begin capturing the aroma. Think about what you smell. Closing your eyes can help you differentiate between aromas. TASTE Make sure you coat your entire tongue and let it linger on the palate before swallowing. Does it taste the way it smells? Do the flavors evolve on the palate or stay the same? Does the whiskey feel thick or thin? What flavors do you taste? After you swallow does the flavor linger or quickly fade away? Sometimes the alcohol is too intense to fully appreciate the whiskey. -
