Stock vs. Broth: Are You Confused? Kim Schuette, CN Certified GAPS Practitioner French chefs have a term fonds de cuisine, which translates “the foundation and working capital of the kitchen.” Bone and meat stock provide just that, the foundation of both the kitchen and ultimately one’s physical health. One of the most common Questions that those individuals embarking upon the GAPS Diet™ have is “Do I make stock or broth?” What is the difference between the two? The two words are often used interchangeably by the most educated of chefs. For the purpose of the GAPS Diet™, Dr. Natasha Campbell-McBride uses the terms “meat stock” and “bone stock.” In this paper, I will use “meat stock” when referencing meat stock and “bone broth” for bone stock. Meat stock, rather than bone broth, is used in the beginning stages of the GAPS Diet™, especially during the Introduction Diet where the primary focus is healing the gut. Bone broth is ideal for consuming once gut healing has taken place. The significant difference is that the meat stock is not cooked as long as bone broth. Meat stock is especially rich in gelatin and free amino acids, like proline and glycine. These amino acids, along with the gelatinous protein from the meat and connective tissue, are particularly beneficial in healing and strengthening connective tissue such as that found in the lining of the gut, respiratory tract, and blood/brain barrier. These nutrients are pulled out of the meat and connective tissue during the first several hours of cooking meaty fish, poultry, beef and lamb. -

The model involves fermions coupled with a modified Abelian gauge field in a tachyon matter. It reproduces some important QCD features such as, confinement, deconfinement, chiral symmetry and quark-gluon-plasma (QGP) phase transitions. The study may shed light on both light and heavy quark potentials and their string tensions. Flux-tube and Cornell potentials are developed depending on the regime under consideration. Other confining properties such as scalar glueball mass, gluon mass, glueball-meson mixing states, gluon and chiral condensates are exploited as well. The study is focused on two possible regimes, the ultraviolet (UV) and the infrared (IR) regimes. I. INTRODUCTION Confinement of heavy quark states QQ¯ is an important subject in both theoretical and experimental study of high temperature QCD matter and quark-gluon-plasma phase (QGP) [1]. The production of heavy quarkonia such as the fundamental state ofcc ¯ in the Relativistic Heavy Iron Collider (RHIC) [2] and the Large Hadron Collider (LHC) [3] provides basics for the study of QGP. In Ghana, at peak seasons of harvesting tomato, high postharvest loses are incurred because of the absence of industrial tomato processing facilities for value addition into other convenient forms to extend shelf-life. Solar drying is a more efficient and low cost method of enhancing the quality and adding value to tomato. This study was carried out to design a natural mixed mode solar dryer suitable for drying tomato and to investigate the quality characteristics of the dried products. Fresh tomatoes were pre-treated with: a) 1% potassium metabisulfite solution; b) 1 % ascorbic acid solution; and c) used untreated as control. -
The Nimrod Antarctic Expedition
THE NIMROD ANTARCTIC EXPENDITION Dr. W. A. Rupert Michell (1879-1966) Sir Ernest Henry Shackleton (1874-1922), a giant of Antarctic exploration, made four journeys into the earth’s most southerly continent. On the Discovery Expedition of 1901-1904 he was Third Officer to Robert Falcon Scott (1868-1912)1. Then, between 1907 and 1922, he organized and led three expeditions2 himself. On the first of these his team included a 28-year- old doctor from Perth, Ontario, W. A. R. Michell. William Arthur ‘Rupert’ Michell was born at Perth, on October 18, 1879, the second son of Francis Lambton Michell (1849-1928) and Margaret Helen Bell (1854-1930). His father was, first, a teacher and later principal at the Perth Collegiate Institute and then, County Inspector of Public Schools. Michell received his primary and secondary education at Perth and in 1902 graduated from the University of Toronto Medical School. He was on staff at Hamilton General Hospital until 1904 when he returned to Lanark County and purchased the practice of Dr. Herbert Edwin Gage (1867-1926) at McDonalds Corners, in Dalhousie Township, north of Perth. In 1906 Michell left McDonald’s Corners and Canada for England where he planned to undertake post graduate studies. Before doing so, however, he signed on with the Elder-Dempster Line as a ship’s surgeon. The shipping line had been founded in 1868 specifically to serve travel and trade between the United Kingdom and colonial outposts on the west coast of Africa. Elder-Dempster ships provided scheduled service to-and- from Sierra Leone; Cape Palmas (Liberia); Cape Coast Castle and Accra (Ghana); Lagos, Benin Bonny and Old Calabar (Nigeria); and Fernando Po (Equatorial Guinea). -
