Welcome to Barbialla, following is some important information for your enjoyment and safety.

RECEPTION OFFICE Open (sometimes) from 9 am to 12.30 pm.

ORGANIC FARM SHOP: Open every day from 9 am to 6 pm.

INTERNET Wi-Fi PASSWORD: “barbialla”. If you are staying in Le Trosce, you do not require a password to connect. If necessary, it is possible to use one of our computers at the Reception by prior arrangement.

GATES Remember to keep your door keys with you. The second key opens several gates and chains throughout the farm.

CARS The speed limit is 30 km/h. We ask that you drive carefully as it is a working farm and usually there are children on the premises. Please always remain on the main road. Do not park cars on the grass (Le Trosce, Brentina) or leave them in the temporary parking zone (Doderi), but use the shaded parking spaces provided.

DRINKING WATER & TAP WATER The tap water is safe, but not good for drinking or for making coffee or tea as it is quite salty. We offer free filtered water at the Shop. You may fill your own bottles or we can provide 5L jugs. We also sell crates (12 bott.) of natural or sparkling mineral water for € 9/crate. You can help yourself down at the farm and register your purchase on your shop tab. Please return the empty bottles to the crates for reuse. Please take care not to waste water. In full summer we may have to turn the water off for a few hours in order to let the wells refill.

HEATING & FIREWOOD Heating is included in the price of your apartment, except for Brentina Ovile & Le Trosce. Please use the heating conscientiously and take care to close the windows and external doors when the heating is on. If you want to use the fireplace please use only the small, dry wood we provide at the farm (€5/crate) in order to avoid danger and smoke. Please place your ashes in the metal bucket and leave it outside your door. We will dispose of them once they are cool. Houses are provided with a fire-extinguisher. You can find their location on a small map in each apartment.

WASHING MACHINE & BBQ There is a common laundry in the small hut at Doderi and another one in the fienile at Brentina. Please be gentle with the doors as the machines only unlock once the cycle is fully finished. We ask that you leave the laundry area clean. You can find eco single dose laundry detergent in the Shop. In the laundry area you will also find 2 BBQs to share with your neighbours. These can be used with charcoal, which can be purchased at the hardware or grocery store in either Corazzano or Montaione, or with wood from the crates.

RUBBISH The farm collects rubbish and recyclables from common bins located at your house. Please separate your paper, plastic/ metal, glass and organic waste from your rubbish and place in the appropriate bins as labelled. You will find information detailing the recycling program at the end of this booklet. Hazardous waste such as batteries can be disposed of at Reception. Please do not leave rubbish in your apartment as it can attract pests and insects. Put it in the common bins daily. Please use the bins provided in your bathroom for waste disposal, not the toilet. Please leave all glass water bottles in the marked crates in the rubbish area, not in the glass recycling.

NO SMOKING POLICY We ask that guests do not smoke inside the apartments, house or common indoor areas. Please collect your cigarette butts and place them in the trash.

ANIMALS There are no dangerous animals in the area, with the exception of the viper. This is a very rare snake but we suggest you don’t put your hands under stones or into log piles and do not walk in the tall grass without shoes. The cows can startle easily so please treat them kindly. If you encounter them out walking, give them space and don’t scream. During the summer there are mosquitoes (particularly at dusk) and horseflies. We recommend you wear light coloured clothing, long sleeves and use repellent at this time. In summer horseflies will follow moving object (e.g. your car). Park and wait two full minutes before getting off the car.

RESPECT THE PROPERTY & DAMAGES We ask all our guests to respect the property they are staying in and to take care as in their own home. Please do not move the furniture, unless it is unavoidable, as it damages the floor and paint and needs to be re-arranged after you leave. If there is minor damage such as a broken glass, please let us know so that we can replace it for the next guests. We understand that breakages occur and it is not a problem. If there is more major damage, there may be a charge incurred for repair of the damages. Often we are not able to check the apartment or house before your departure, so please let us know if anything has occurred. If we find that the apartment is in excessive disorder, we reserve the right to impose an extra cleaning surcharge.

RESPECT YOUR NEIGHBOURS Please be considerate of your neighbours. We ask that noise is kept to a minimum before 10:00 am and after 10:00 pm. If you’re renting an apartment on the second floor, such as Brentina Ovest or Doderi Alto, please be twice careful with the noise.

CHECK OUT is at 10:00 am. At times we can allow for a late check-out. Please enquire at Reception.

COOP This tiny supermarket has a broad variety of local and organic products. It is at the beginning of Montaione on the left side right before the stop sign. Open from 8.30 to 1pm and from 3 to 8 pm Monday- Saturday and on Sunday mornings 8:30 am – 1 pm

Organic and Biodynamic products

A Terra - pasta & more – tour of the lab Lovely shop that sells self-produced pasta, biscuits, flour and a selection of delicious organic products (we suggest to try cheese and cured meat). The shop is in the main square of the town of . You can also arrange a guided tour of the pasta lab (this needs to be arranged in advance). Ask us for info.

Camporbiano – cow cheese, organic veggies & more Biodynamic farm shop selling pasta, flour, cheese, milk, yogurt, fresh vegetables and much more. To reach Camporbiano, pass through Montaione and follow the signs to . When you get to the big u-turn leading to , continue straight towards San Gimignano. After a couple of km, take the first road on your right (follow the sign ‘Camporbiano’). The first (closed) grey gate on the left is Camporbiano. Ring the doorbell.

Fattoria Le Caprine – goat cheese and more This farm is run by a group of friends producing amazing goat cheese in the countryside between Gambassi Terme and . Their products are absolutely amazing; we suggest the fresh caprini cheese and the taleggio. If you want to visit the farm and have a tasting you need to contact them the day before. Small stores San Miniato Alto There is an excellent butcher located on the main road, Falaschi, where you will find a large selection of meats and salami. In the main street, there’s also a well-provided truffle store and an independent book store (for those who want to try to read an Italian novel!) And don’t miss the well-known ‘Il Cantuccio di Federigo’ for bread, cookies, tarts and a great selection of .

Dinner Delivered to Your Door Don’t feel like cooking while on vacation? We have the answer. Delivered to your door, delicious homemade lasagna, a large mixed salad, and a rich tiramisu for dessert. Lasagna can be made with meat or vegetarian (please specify). Included with the mixed salad are a small bottle of vinegar and a 100 ml bottle of Bio Extra Virgin Olive Oil produced from our farm. Organic and seasonal ingredients are used when available.

Papaveri e Papere (Via Dalmazia 159/d, San Miniato – PI) If you’re looking for a fancy, elegant restaurant, you can’t miss Papaveri e Papere. Run by the chef Paolo Fiaschi, their offer stands between tradition and innovation, with attention to quality and look. They have a good selection of wines and a sommelier that can help you choosing the right pairing for your meal. The restaurant is a bit on the expensive side, yet surely worth a visit. Il Caminetto (Via Mura, 19, Montaione) On the way to Montaione, this is the last building to the left while crossing the “Mura” village, about 5 minutes from the farm entrance. Typical Tuscan style and menu. Good food and good service at fair price. It's always best to ask if there are any (seasonal) specials. Closed on Monday. Tel. +39 0571 677130

Osteria San Vivaldo (Via San Vivaldo, 21, Montaione) The must go place for meat lovers. Here you can find traditional cuts, such as fiorentina steak, together with more unusual ones such as wild boar steak, lamb, game, and more. The best is always the mixed platter. Fair price and pretty good meat, the owner Andrea is a restless, ironic, and funny guy that usually animates the evening. Closed on Tuesday. Tel. +39 0571 69264

Borgo della Speranza (Strada vicinale di Ulignano snc, 56048 Volterra) We found this place by chance, and as always chance carries the most wonderful experiences. Quite remote, the restaurant is a 40 minute drive from Barbialla 5 km of which on a dirt road, but absolutely worth the effort. This remote and stunning borgo from the XVII century has been restored to perfection. The restaurant offers an incredible view of Volterra. If you are going, make sure you get there before sunset, as what you will see will have an easy way into your most cherished memories. Pizzeria Alberi (Via Alberi, Loc. Alberi) Would you like to take a plunge into our most authentic (and rustic) neighborhood? This bar-pizzeria is open at lunch for a delicious panini and at dinner (every evening in summer, only on Saturday the rest of the year) for a good pizza and barbecue. The owners are…well…rustic. Non sul collo (Via I- Franchi, 11, Gambassi Terme) Despite its funny name, this pizzeria offers very good pizza, awesome sweet ends, a good selection of craftbeers and nice staff. If you happen to cross Gambassi, this is a good option for a family. Closed on Tuesday. Tel. +39 (0)571638969.

Osteria Pinchiorba (Via del Teatro 23-27, Gambassi Terme) A funky restaurant with awesome food – most producers are local! – and fair priced. They never missed a spot with us! Closed on Monday. Tel: +39 0571 639120

Birra e Acciughe (Via A. Conti, San Miniato) Open only at night (5.30 PM to 2.30 AM), this alimentary shop in the center of San Miniato makes very tasty panini and sells good beers. A suggestion if you’re looking for a high quality finger-food experience.

TOP 10 ACTIVITIES IN BARBIALLA

A holiday is supposed to be relaxing, right? Why not lie back on one of our deck chairs and enjoy the warmth of the sun. There is no need to leave the property, and if you want some activity, here is our list of things to do at Barbialla.

Stretch your legs: There are walks of various lengths and difficulties throughout the property which are all marked on the map. Scan the QR code to get the map or download it from our website (http://www.barbialla.it/maps/).

Visit the animals: Check if the chickens have laid any eggs. Give the cows some fresh grass to munch on. (Re)name all seven cats. Feed the pigs. Pay a visit to our Guinea Fowls. Or try your luck spotting wild boar, foxes, porcupines and more at dusk.

Cooking Classes: Invite our lovely chef, Serenella, into your apartment to unlock the secrets of Italian cooking and provide a four-course meal for your enjoyment.

Truffle Hunting: If you are here in the fall, don’t miss your chance to join our truffle hunter, dog and guide to find this rare white mushroom. We take small groups of people through our truffle grounds for 2 hours and finish with a tasting of local and seasonal products.

Taste: We invite guests to taste the products of the farm and some of the nice wines we have in the store. Just ask the Reception office.

Fishing: Try your luck in our lake that is loaded with largemouth bass and carp. And if you don’t have your fishing gear, ask the reception for renting it.

Get your hands dirty: You’ll often find us in the veggie garden. Feel free to jump in and help out with digging, planting and, best of all, harvesting.

Forage for dinner: Depending on the time of year, there are wild fruits and vegetables to be gathered from the property, such as apricots, blackberries, figs, prickly pears, wild fennel, chicory, and mushrooms. Do make sure to get your mushrooms checked by someone reliable before consuming.

Play: Brentina houses a ping pong table in the fienile, so set up a tournament against your neighbours. You might also find Kubb sets, bocce balls, cards, checkers, backgammon or other board games in the apartment. A funny set for tic-tac-toe is available behind the Reception Office, next to the veggie garden door.

FISHING AT BARBIALLA NUOVA

Barbialla Nuova has a small lake, whose location is specified on the map provided at check in. The lake can be reached with a 10-minute walk from the reception area. It is home to many largemouth bass and carp. Bass can be anywhere between 15-40 cm (6-16 inches). Some carps of 3-6 kg (6-12 pounds) can be seen near the surface during sunny summer days. Some people have reported of bigger ones (10 kg or 23 pounds), but these are a matter of legend, and we do not speak of them.

If you have your own equipment and wish to fish in the lake, please let us know and we will provide you with the Rules and Regulations that are implemented to keep you safe, and to keep the lake and the fish healthy.

*Morning or Afternoon. If you fish in the early morning the rods will be available for you the previous evening.

The fishing rods are provided to you ready to go but feel free to change the line to suit your needs. If you are not familiar with the equipment we would be happy to show you how to use it, along with some basic tips and tricks. A can of corn is provided for bait.

Keeping the fish You are allowed to keep one largemouth bass per day. However, to protect the young fish, the bass you keep must be above 25 cm in length. They are delicious to eat. The carps we have are a rare breed and also do not taste good, so please release them back in the lake after handling them with care.

CHEF-AT-HOME SERVICE

The chef will use your kitchen facilities to complete the cooking of your meal. Ingredients are in season and organic when possible. Menu can be adjusted based on allergies/intolerances. If you want a vegan menu they will be happy to suggest you several choices. A meal includes one choice per course; any change can be arranged with the chef directly. BABYSITTING SERVICE

Take some time for yourself and make your family holidays more relaxed!

Our baby sitters offer two types of service:

Night service: Feel free to go out for a romantic dinner and enjoy a lovely evening alone. They will come to your apartment and look after your children when you are out. Price: €20/hour (min 4 hours)

Day service: Relax in your apartment while they give you a hand with the children. They will come to your apartment and help look after the children outside in the garden or swimming pool. Price: €15/hour for 1-2 children; € 20/hour for 3 children (maximum).

Please note: Babysitting services are offered in English & Italian. There are also offers available for longer periods of time (i.e. one day).

HUNT FOR THE ELUSIVE SAN MINIATO’S WHITE TRUFFLE Ricerca del tartufo bianco di San Miniato

Season: (approx.) from September 20th to December 15th.

Duration: About 2.5 hours, starting at 9:00 am sharp.

When: Truffle hunts are organized on Tuesday, Thursday, and Saturday. The schedule is somewhat flexible, depending on the availability of our truffle hunters.

Description: A walk through our exclusive organic white truffle reserve, together with Giovanni, our “tartufaio” (truffle hunter) and his dogs. An English-speaking guide will describe the action and explain the particular white truffle botanical characteristics as well as the truffle traditions in the region. Back at the farm, we will answer all questions while drinking a glass of Tuscan wine and enjoying a tasting of local products in the open air.

Purchase: When available, guests can buy truffles from our farm shop “Lo Spaccio” at market price (variable).

Price: Mixed groups (min 4 participants): € 80/person Private groups: € 200 + € 60/person (eg: 2 guests: € 320) Kids from 0 to10: free. Over 11: standard rate.

Lunch: If any guests are interested in a lunch featuring the white truffles, we will be glad to arrange a special truffle menu at the farm premises. Just ask us for a rate. . Bookings: A valid credit card is required at time of booking to hold as security deposit.

Cancellation Policy: at booking, we do not charge anything. When no truffle lunch is asked, cancellations up to 24 hours before the hunt will not be charged (or will be fully refunded if prepaid). When you ask for a truffle lunch, cancellations up to 7 days before the hunt will not be charged. Late Cancellations or No Show will be charged in full.

Bad weather: In case of bad weather the truffle hunt will be cancelled or rescheduled. There will be no charge for cancellations due to bad weather.

Dress: Guests should wear shoes and clothes adequate for a long walk into wet woods, such as hiking boots, work boots or rubber boots, long pants and rain jackets. It can be muddy.

ACTIVITIES OUTSIDE BARBIALLA

Here’s a list of activities you may love to try outside Barbialla.

Horse back riding: On the way to Castelfiorentino (10 minute driving) there’s a ranch called Colle degli Etruschi. Jessica and her team offer horse back riding lessons, or lead groups to tours (one hour to one day long). Prices are very fair. How to reach the ranch: take the left on the main road following Corazzano and take the first turn on the right following direction Castelfiorentino. After a couple of km, on your right, you’ll find a road with a big wood sign “Fattoria Santo Stefano”. Follow the road up to the hill and then take the left for about 500 m. The ranch is on your left. You can get in contact with Jessica and her team directly through WhatsApp: +393315061692.

Biking: Willing to visit the beauty of Barbialla but don’t feel like walking? Feeling like discovering on bike? E-bikes and many other high-quality bikes can be rent at LandHill, in Montaione (Via Kennedy). The passionate clerk will help you choosing the best bike for you. He can also provide some basic technic wear (as helmets, shoes) and carriers for your children. Bikes can also be delivered at Barbialla (€ 30). Golfing: A 20 minute drive from Barbialla you’ll find the beautiful renovated Borgo Medievale di Castelfalfi. Their Golf Club is known as one of the most beautiful courses in Tuscany. They can also rent golf equipment. All the information needed can be found on their website: www.castelfalfi.com.

Hiking: The town of Montaione made a great effort in creating and signing hiking trails. Maps are available at the Tourist office in Montaione. Some Sundays, the town hall offers guided walks in and around Montaione. You can go for a walk with the nice environmental guide Andrea Bernardini through woods and valleys discovering Tuscan nature for free. Ask the dates at the Reception. Another nice hiking trail is along the River (see the dedicated section at “Day Trips”).

Driving: If your inner dream is to drive on the Tuscan hills with a Fiat 500 or a Renault R4, then you should visit www.classicdrives.it. They can deliver their special cars to the Reception Office.

Pottery: The main town for the production of pottery in Tuscany is . The whole town is devoted to the production and sale of the Ceramica di Montelupo and various artisans live and produce their art crafts there. DAY TRIPS

Florence You could really devote more than one day to the sights of this beautiful city. To start – have some gelato in Piazza Duomo, visit the art galleries of Uffizi and the Accademia and wander across Ponte Vecchio. We suggest you go to Florence by train (from the stations of San Miniato or Castelfiorentino). For more information see section “Day trips to Florence” in this booklet.

Siena The rival of Florence for many centuries, is home to one of the oldest banks in the world (Monte dei Paschi, founded in 1472) and is filled with gorgeous red bricked architecture. It holds a famous, no holds barred horse race called the Palio in the central square (Il Campo) on July 2 and August 16. You can go there by train also (departure from Castelfiorentino). Volterra A unique and imposing village, where alabaster (a peculiar form of gypsum) is mined. The Roman ruins are a must-see and we highly suggest a walk to all the gates of the village, some of which have sections dating back to the Etruscan period.

San Gimignano Dominated by numerous towers, the nearby town of San Gimignano is a breath-taking village, though it can get quite crowded by tourists during the season. Make sure to wander off the main street to get a sense of the town’s charm. We suggest a visit to Galleria Continua, one of ’s most important contemporary art galleries. Don’t miss an Ice Cream at Dondoli’s (located in the Cisterna square): it’s probably one of the best gelaterie in Tuscany. Restaurant suggested from our guests: Cum Quibus.

Certaldo Alto Certaldo’s pride and joy is the famous Italian poet Boccaccio, writer of the Decameron, and everyone in the town centre seems to have a favourite anecdote about the mischievous Renaissance writer. The historic centre is set on a hill overlooking the new town where you need to park. Take the funiculare to the top or walk up the short but steep path through the olive groves. During the second week of July you can see it under the magic light of Mercantia, one of the biggest Street Art Festivals in Italy.

Parco Fluviale dell’Alta Val d’Elsa. It’s a four-kilometer walk along the Elsa River. There’s plenty adventure for everyone: children can enjoy jumping from stone to stone while crossing the river, fisherman can try their skill with carps and chubs, and everyone can jump in the cool water where the river makes natural pools. There are picnic tables, just make sure you go there early to catch one. We suggest to avoid summer weekends, because the park gets packed with locals. To go to the park: exit Colle Val d’Elsa on the Firenze-Siena Highway and follow the signs.

Lucca A walled city located a 1.5-hour drive away, Lucca is effortlessly charming. It has a renowned antiques market on the 2nd Saturday and 3rd Sunday of the month. We highly suggest beginning your visit with a walk or ride around the walls surrounding the historic centre; bicycle hire shops are located everywhere throughout town. The San Martino cathedral hosts the “Volto Santo” a famous wooden crucifix. Lucca is also home to an important Italian comics fair: Lucca Comics (first days of November). Restaurant suggested from our guests: Osteria Baralla in Via dell’Anfiteatro.

Livorno Otherwise known as Leghorn, this is where Tuscans themselves go for a day trip. Unpretentious, bustling and vibrant, Livorno is a true port town, with a promenade along the beach and a sensational fish market – get there nice and early. Don’t forget to try the local specialità – ponce – a coffee with rum and lemon. Bad Elf is a good spot for a craft beer.

Pisa The Leaning Tower, need we say more? But there is more to , it is a lovely university town set along the river and very pleasant to explore. One nice square/market is called Piazza delle Vettovaglie. For beer lovers, you can’t miss a visit to the Orzo Bruno pub (Via delle Case Dipinte, 6/8), an amazing local microbrewery.

San Miniato A local village with fantastic charm, this town is best experienced on foot. Park just across from the school (turn left rather than entering into town after the long brick wall) and walk up the narrow road to town. Check out the market schedule to catch the Slow Food market or antiques market. Stop into Il Cantuccio di Federigo for a tasty sweet snack and a bottle of delicious vin santo. The grassy piazza outside of the main tower is a great spot for a picnic at sunset.

Monteriggioni This is a rediscovered walled village visible from the road to Siena. Used for housing sheep in the 1960s, Monteriggioni is a delightful, though touristy, village to explore. We warmly recommend stopping off at Bar dell'Orso (just after exiting the highway) for a bite to eat. In July Monteriggioni hosts a medieval Festival that is definitely worth a visit.

Thermal Baths Terme della Via Francigena in Gambassi is the closest thermal bath to Barbialla (closed on Tuesday). Terme di Casciana is pretty close as well (closed on Wednesday). Our favourite thermal bath though, is San Giovanni di Rapolano, one hour and a half drive, just past Siena on the way to Arezzo. There are also many free outdoor hot springs about 2-3 hours driving, at Saturnia and Petriolo. Stop at the Reception for more information on finding hot springs.

Beaches To get to the nearest beaches, you need to travel to Livorno on the FI-PI-LI highway. There are rocky beaches along the coast road, just south of Livorno. Alternatively, you can travel further afield for sandy beaches. To reach them, you need leave the FI-PI-LI at Collesalvetti and head south towards Roma/. There are nice beaches either south of Donoratico or south of San Vincenzo (Baratti). In Baratti there’s an archeological site with a nice workshop for kids. We recommend the food at Zanzibar or at Piombino, and a visit to the town of Bolgheri.

Our suggestions for mixing and mingling Most of the locations described above are close to each other and it is easy to combine multiple destinations within a daytrip. Would you like to visit a medieval town and have a wine tasting afterwards? Would you like to try one of the diners we recommend and still be able to visit one of the cities in the area? Most likely, you can do it! We recommend looking up the locations on Google maps, to help you plan your route, and we are always happy to assist you.

ACTIVITIES OUTSIDE BARBIALLA

Good news for families visiting Italy is that children are welcome just about anywhere. The following list includes places that both parents and children should enjoy.

Giardino di Boboli in Florence: These gardens, located within Palazzo Pitti, are a beautiful example of a Tuscan Renaissance garden, filled with sculptures, grottos and fountains. Closing hours vary through the year, the gardens open at 8:15 am and close an hour before dark. Tickets are €7 for the adults, € 3,50 for children. Closed on the 1st and last Monday of the month. Siena Art Museum for children (Museo d'Arte per Bambini): This is a wing of the Complesso Museale del Santa Maria della Scala in the Piazza del Duomo which is open every day from 10:00 to 17:00 – 20:00 depending on the day. The complex is an interesting labyrinth with plenty of history, though the children’s section is a bit small. Tickets are €9.00, €7.00 for kids. Closed on Tuesday. Montaione – local playgrounds and library: The library in Montaione mainly has children's books in Italian, but for small children the pictures are often enough. The library is open from Tue to Sat, 9:00 to 13:00, excluding Thursdays; Tuesday and Thursday afternoons from 15:00 to 19:00. It is on Via Marconi, in the Montaione centre. There is a playground just across the road.

Museo Piaggio (Vespa Museum): Nothing says “Italy” like the much-loved Vespa, which were created and produced in nearby Pontedera. Located just outside town in an industrial lot, the museum is small but nicely done, with multiple videos aimed at children and plenty of interesting models from years past. La Rocca di Staggia: This once abandoned castle has been restored and rejuvenated by a lovely and enthusiastic curator who has turned the castle into a sort of philosophical art gallery. She is more than happy to tailor a visit to families with small children, with advance notice. Open daily from 10:00 to 19:00, though off season visitors may want to call first (+39 3664792092, e-mail [email protected]).

Museo Leonardiano in Vinci: this lovely museum offers a visit to Leonardo’s creations. The museum is pretty interactive and they organize a lot of fun activities for children. You can also combine it with a visit to Leonardo’s birthplace. Open every day from 9.30 to 19:00 The price is € 11 for the adults, € 8 for children.

Bike riding in Lucca: There are many places to hire all types and sizes of bicycles in town. You can then view the whole city from up high on the wide medieval walls. There are playgrounds along the way for a break.

Gelato: There are so many flavours that you could have a gelato every day without tasting the same flavor twice. Just try it. Look for the gelateria that are ‘artigianale’ as this means they make their own. Our top suggestions: Dondoli in San Gimignano, and Gelateria Mori in San Miniato.

Pinocchio Park: Pinocchio Park is a sculpture park depicting scenes from The Adventures of Pinocchio and encompassing a small funfair. It is located in Collodi, where the author lived, which is just over one hour's drive away. It is a bit overpriced, but fun for small children. There is also a Butterfly House and historic gardens in Collodi. For more information, check www.pinocchio.it.

Merry-go-Round: A great break while touring the sights, there is a small merry-go-round (giostra in Italian) located in the Piazza del Repubblica in Florence with rides for about €2.

HOW TO MAKE AN ITALIAN COFFEE

One thing that we want you to leave Barbialla with is the knowledge of how to make an espresso coffee like a true Italian.

Step 1 Check the machine is clean of old grounds etc by rinsing it under fresh water. The percolator should be used and have a verneer of coffee in it so never use soap or scrub.

Step 2 Fill the base with water – bottled is better – but only up to the level of the filter.

Step 3 Set the filter in the base and fill it with good organic, fairtrade coffee. For dark strong coffee, press it down; for lighter coffee, just tap the edge a little so it settles evenly.

Step 4 Screw the top on tightly.

Step 5 Put the burner on low and set your coffee machine on top.

Step 6 This step requires a little patience: wait until you hear the coffee bubbling through the percolator. Lift the lid to check the top is full. (If it isn’t, you can do a quick fix by running the base under cold water for a minute. But do bring down the percolator to Reception so we can switch it out for you.) Then turn off the gas. Add sugar – raw or white; add milk – hot or cold. But remember a true Italian only adds milk to their morning coffee!

Step 7 Savour the aroma and enjoy your coffee!

LIGHTING A WOOD FIRE

If the days when you were a Boy Scout or Girl Guide are just a hazy memory, then you might need some tips and reminders on how to light a fire for the first time, without smoking out the house!

We ask you to use the kindling and wood that we provide for €5 per box to start your fire. It is the correct size and is stored under cover to remain dry. Boxes are in the car park next to the bottled water. You can leave €5 in the wooden box or put it on your bill by telling someone in the office.

You need to begin building your fire with paper – scrunched newspaper or cardboard is best. If you use cardboard, tear it into small pieces. Otherwise use at least 6 scrunched balls of newspaper.

Make sure the fire is built at the back of the hearth, so the chimney can draw the smoke upwards.

Then place a good deal of twigs and small wood in a pyramid shape over the paper. Place progressively larger wood, maintaining the pyramid shape. Save the really long and large wood, as this should be placed on the fire when the smaller twigs and sticks have caught alight.

Light the paper or cardboard and when the wood has caught, place the larger logs on top.

If the fire is not lighting well, begin again and use a larger amount of paper and twig.

TRASH AND RECYCLING PROGRAM

Tuscany has a very ambitious garbage program where practically anything and everything is destined to be recycled. We ask that you please take the extra 10 minutes a day to separate your trash correctly to help us, and help Tuscany, stay green. You’ll find a complete list of what goes where on the following pages.

CARTA & CARTONE PAPER & CARDBOARD Basically all clean paper. Please do not put any soiled paper napkins or plates (these go into Organic Waste), anything plastified (goes in Trash) or any milk or juice cartons (Tetrapak goes in Plastic & Metal). Most deli sheets have a plastic layer that can be separated; the plastic then goes in Plastic and the paper into Paper. Please place the paper directly into the bin provided (no plastic bags).

VETRO GLASS All glass bottles and containers, properly rinsed. Even broken glasses & glass plates can be placed here though please make sure that they are placed properly inside so as not to cut the trash collector. No broken lightbulbs. Please put the Tosca glass water bottles in the blue-gray crate provided – these get re-used, not recycled.

PLASTICA & METALLO PLASTIC & METAL Virtually all plastic containers and bags can be recycled as well as Tetrapak (milk and juice containers), styrofoam and aluminum foil. Plastic plates and glasses – properly rinsed. Please rinse all containers before throwing away.

RESIDUI ORGANICI ORGANIC WASTE The most ambitious part of the program – anything biodegradable can go in this bin. All food scraps, whether vegetable, meat, bones or cheese. Coffee grounds, tea, egg shells, biodegradable diapers, biodegradable plastic bags and used paper napkins go here too. Please do not put any non-biodegradable diapers or baby wipes in this bin. It is essential that you use the biodegradable bin liners that we provide. If you run out of these liners we are happy to provide more; do not use non-biodegradable plastic bags.

RIFIUTI INDIFFERENZIATI TRASH Anything else not outlined above goes into the trash: razors, non-biodegradable diapers and wipes, old pens, cigarette butts, cds/dvds, plastic cutlery or silverware, lightbulbs, broken toys, toothbrushes, etc.

Keep in mind that emptying your trash daily helps to avoid insects and pets inside the apartment.
