Descriptive Beer Styles descriptive beer styles Ales are brewed using top fermenting yeast that performs at warmer temperatures. This gives most ales ALE a sweet, full bodied and fruity taste. They are brewed in a variety of styles including Blonde, Red, Amber, Brown and Black. Bock beers are a bottom fermenting lager that usually takes months of cold storage to make them smooth. BOCK Bock beers are usually stronger than a typical lager. They usually range in color from dark amber to nearly black with robust malt character. Ciders are made from fermented apple juice and range from being dry and fruity to sweeter with a more CIDER complex style and high effervescence. These are ales that are usually maltier, have higher alcohol content and are brewed with more hops than IPA regular ales. Lagers are brewed using bottom fermenting yeast and aged at colder temperatures. The cold temperatures LAGER help create a crisper tasting beer. OKTOBERFEST Oktoberfest is a full bodied, rich, toasty lager with a mild hop taste. Typically these beers range in color from amber to dark copper in color, and have a medium to high alcohol content. Pilsners are a light straw to golden color and clear. They are brewed using bottom fermenting yeast which PILSNER produces a smooth and crisp taste with a clean malty palate. Porters are generally a dark brown beer but will occasionally lean more toward a black color. They have a bold PORTER roasted to burnt malty taste and high levels of hop bitterness that comes from the use of roasted, un-malted barley. Pale ale is an ale made with predominantly pale malt. Pale ales are known to be hop-forward with a malty PALE ALE flavor and a golden to amber color. The highest proportion of pale malts results in a lighter color. Sours are tart-tasting and made with bacteria and yeasts. Sours come in a wide range of styles and can run SOUR the gamut from mouth-puckeringly sour to barnyard funky to fruity and light. Stouts are a fuller bodied and richer version of a porter and are usually brewed to have a lower carbonation STOUT level. They are very dark in color and often have a toast, chocolate or coffee like taste. Wheat beers are usually top fermented and are generally unfiltered with a hazy appearance due to the type WHEAT of yeast used. The malt can be clean and neutral or rich and Munich-like, and may have a hint of caramel. The roast can be coffee-like but should never be burnt. A low noble hop aroma is optional. Clean lager yeast character (light sulfur possible) with no fruity esters or diacetyl. Appearance: Medium to very dark brown in color, often with deep ruby to garnet highlights, yet almost never truly black. Very clear. Large, persistent, tan-colored head. Flavor: Light to moderate malt flavor, which can have a clean, neutral character to a rich, sweet, Munich-like intensity. Light to moderate roasted malt flavors can give a bitter-chocolate palate that lasts into the finish, but which are never burnt. Medium-low to medium bitterness, which can last into the finish. Light to moderate noble hop flavor. Clean lager character with no fruity esters or diacetyl. Aftertaste tends to dry out slowly and linger, featuring hop bitterness with a complementary but subtle roastiness in the background. Some residual sweetness is acceptable but not required. Mouthfeel: Medium-light to medium body. Moderate to moderately high carbonation. Smooth. No harshness or astringency, despite the use of dark, roasted malts.

Thus, as beer volatile components represent the major contributors for beer overall and peculiar aroma properties, this work intends to perform an in-depth profiling of lager beer volatile metabolites and to generate new data that may contribute for molecules’ identification, by using multidimensional gas chromatography. A set of lager beers were used as case-study, and 329 volatile metabolites were determined, distributed over 8 chemical families: acids, alcohols, esters, monoterpenic compounds, norisoprenoids, sesquiterpenic compounds, sulfur compounds, and volatile phenols. From these, 96 compounds are reported for the first time in the lager beer volatile composition. Around half of them were common to all beers under study. Clustering analysis allowed a beer typing according to production system: macro- and microbrewer beers. Monoterpenic and sesquiterpenic compounds were the chemical families that showed wide range of chemical structures, which may contribute for the samples’ peculiar aroma characteristics.

When Freetail’s the San Antonio craft brewing to re-invigorate without excess bitterness--thanks to their very soft water. That beer still rules the world today as pilsner (in its various, not-so-traditional incarna- tions) is the go to brew across cultures. Still, that Munich brewmaster’s legacy--brewing with water much closer to our aquifer water than the soft water of Plzen--struck a delicate balance of silky, light malt flavor and herbal hop nuance to create a refreshing and rewarding beer.
