They are just SO popular that they disappear very quickly. Watch out for news of these wines in the next newsletter – all the old favourites will be back. With the aim to contribute to that debate, a study of the influence of the varieties Tannat, Merlot and Cabernet Sauvignon on berry weight, on berry components (flesh, seeds and skin) and on the varieties’ oenological potential under different water supply conditions was carried out in Uruguay between 2001 and 2004. Replicated samples of 250 berries per vineyard were gathered at technological maturity at harvest. Berry weight and volume, weight ratio among each of the components and anthocyanin potential (ApH1 ) were measured and a basic analysis of the must was carried out. The vine water status was established through the measurement of pre-dawn leaf water potential. The tests showed that berry weight and sugar content were positively correlated and depended on variety, as was evident from the proportions of the berry components. Flesh weight was the most important determinant of berry weight, and flesh weight changed with the weight of the seeds. Larger values of these two components explained the heavier berries of the Tannat variety.

If it saturates any part of a winery’s environment (barrels, cardboard boxes, or even the winery’s walls), it can even be transferred into wines that are sealed with screw caps or artificial corks. Thankfully, recent technological breakthroughs have shown promise, and some cork producers are predicting the eradication of cork taint in the next few years. In the meantime, while most industry experts agree that the incidence of cork taint has fallen in recent years, an exact figure has not been agreed upon. Current reports of cork taint vary widely, from a low of 1% to a high of 8% of the bottles produced each year.     PINOT PEDIGREE DIAGRAM No fewer than 156 western European grape varieties make up this huge pedigree of natural crosses, with savagnin, gouais blanc and pinot playing the major roles. Given the number of varieties that are currently unknown (?), this pedigree is just one of the possible interpretations of all direct parent–offspring relationships that have been discovered by DNA parentage analyses (Pinot and teroldego, which have a grandparent–grandchild relationship, are included to illustrate the unexpected link between Pinot and syrah). It strongly challenges the commonly assumed independent origins of western European varieties and argues in favour of a small core set of founder varieties that have given birth through natural crosses to the significant biodiversity we know today.     Wine & Cheese by TCC’s July 2018 Wine Club In honor of Bastille Day, we are featuring two wines from different regions in France that are both sustainably produced. Our first selection is the Château La Gabarre Bordeaux Blanc. Château La Gabarre is located in the commune of Galgon which on the Right Bank of the Siene River just north west of Lalande-de- Pomerol. The estate’s vineyards have been in the Gabard family since the 1800s and are now farmed by Stephane and Paola who took charge in 1999 and follow sustainable farming practices. Our second selection is the Château Sainte Eulalie Plaisir d’Eulalie. Château Sainte Eulalie is located in the Minervois AOC which is in the Languedoc region. The Languedoc region covers the Mediterranean coastal area west of the Rhone River. This region is known for wines produced with Carignan, Grenache, Syrah and Mourvèdre, three of which are in the selection this month. Château La Gabarre, Bordeaux Blanc Type: Blend Varietal composition: 80% Sauvignon Blanc 20% Semillon Vineyard Location : Bordeaux Vintage : 2017 Alcohol : 12.5% Tasting Notes: Fermented in stainless steel, this fresh and inviting wine has aromas of honeydew melon, grapefruit and peach with flavors of citrus and melon and a pleasant minerality on the finish. Food Pairings: Pair with our Marinated Cheese Plate, Shrimp Cocktail with Mango Salsa, or Burrata Plate. Cheese Club Pairing: For this month’s cheese club, pair with the Ludwig Farmstead Creamery, Sangamon Double Cream. The mild, buttery flavor of the cheese complement the honeydew and citrus flavors in the wine.

    Jean-Charles Boisset Jean-Charles Boisset was born into the world of wine in the village of Vougeot, Burgundy, France. His lifelong passion for wine began as a child, growing up above the cellars and within view of the centuries-old vineyards of Château du Clos Vougeot, the epicenter and birthplace of Pinot Noir and Chardonnay. His parents, Jean-Claude and Claudine, founded the family winery in 1961 with an innovative and entrepreneurial spirit in one of the most traditional winegrowing regions in the world. Today, the family collection includes wineries that share more than 18 centuries of combined winemaking heritage and tradition in some of the world’s most prestigious terroirs, from Burgundy to the South of France, to California’s Napa Valley and Russian River Valley. Jean-Charles leads the family firm with passionate commitment to fine wine, history, quality and a deep respect for the environment. He implemented organic and Biodynamic farming at all of the family’s estate vineyards in Burgundy and California.
