    POL ROGER BRUT RÉSERVE NV Champagne Pol Roger was founded in 1849 and now owns 87 hectares of vineyards on prime sites in the Vallée d‘Epernay and the Côte des Blancs. Its cellars run for 7km and are on three levels, the deepest known as the ‘cave de prise de mousse‘ at 33m below ground. As the name suggests, this is where the wine undergoes secondary fermentation in bottle. The fact that this deep cellar is at 9°C or less, rather than a normal cellar temperature of 11-12°C, prolongs the fermentation and is a contributing factor to the quality and particular style of the wines and their famously fine bubbles. Pol Roger Brut Réserve is blended from 30 still base wines from different vineyards, different vintages and the three main grape varieties which dominate the champagne region: Pinot Noir contributes body, depth of character and life-extending tannins and comes from the villages of the Montagne de Reims – Verzy, Verzenay, Mailly, Ambonnay, Mardeuil and Louvois; Chardonnay provides the lightness, elegance and finesse and is drawn from Epernay itself and the villages of the Côte des Blancs – Cuis, Oiry, Oger, Vertus, Moussy and Chouilly; Pinot Meunier supplies youthful freshness, vigour and plump character with the grapes coming from the Vallée d’Epernay – Vincelles, Venteuil, Troissy, Damery, Vandières, Brugny, Chavot, Monthelon and Pierry. The Brut Réserve is made from both the cuvée (the free-run juice and the first, light pressing) and if necessary, the taille (second pressing) which provides a higher proportion of essential tannins and structure.

    The beverage from France that conquered the world Without doubt, the history of champagne and sparkling wine is tied to France, and its origins to the northern French region of Champagne. England, however, was producing bottles strong enough to contain carbonated wines as early as the 17th century. In the interest of preserving trees, the use of wood in the process of making glass had been prohibited, and the glass resulting from the use of coal rendered dark, thick-walled bottles which naturally withstood greater internal pressure. Yet the starting point remains France, where the wine was most likely brought from and Champagne, from where it was later purposely ordered. Records remain of English-French wine trade. According to one plausible theory, the high sugar-contact wine was sealed and stored, after a noisy fermentation, in strong wooden barrels. When several years later the cork was removed, a sparkling, pleasantly-fragranced beverage was discovered. There is another legend, according to which the discovery of sparkling wine is connected with the late harvesting of the grapes. In the region near Johannesburg, a church belonging to, but located approximately 150 km from the archbishopric, had to wait for the bishop’s permission before harvesting. Riding on horseback, the messenger arrived three weeks late with the permission, but in the meantime, the grapes had over-ripened. Contrary to custom, the grapes were harvested anyway, producing a wonderful, bubbly wine-consumed as a magic elixir. It is likely that France has been storing and fermenting wine in barrels or bottles since the 16th century.

    Cuvée Sir Winston Churchill The « Cuvée » Champagne Pol Roger created their Prestige Cuvée in homage to Sir Winston Churchill mindful of the qualities that he sought in his champagne : robustness, a full-bodied character and relative maturity. The exact blend is a closely guarded family secret but it is undeniable that the composition would meet with the approval of the man to whom it is dedicated : "My tastes are simple, I am easily satisfied with the best". Pinot Noir predominates, providing structure, breadth and robustness whilst Chardonnay contributes elegance, finesse and subtlety. Composed exclusively of grapes sourced from Grands Crus Pinot Noir and Chardonnay vineyards which were already under vine during Churchill's lifetime. Cuvée Sir Winston Churchill is only made in the very best vintages and is always released later than the other vintage dated Champagnes from Pol Roger, marking Churchill's appreciation for older wines. Vinification & Maturation The must undergoes two débourbages (settlings), one at the press house immediatly after pressing and the second, a débourbage à froid, in stainless steel tanks at 6°C over a 24 hour period. A slow cool fermentation with the temperature kept under 18°C takes place in stainless steel with each variety and each village kept seperate. The wine undergoes a full malolactic-fermentation prior to final blending. Secondary fermentation takes place in bottle at 9°C in the deepest Pol Roger cellars (33 metres below street level) where the wine is kept until it undergoes remuage (riddling) by hand, a rarity in Champagne nowadays. The very fine and persistent mousse for which Pol Roger is renowned owes much to these deep, cool and damp cellars.

    Pol Roger Brut Réserve NV Grape Varietals: *Equal parts: Pinot Noir, Chardonnay & Pinot Meunier Growing Region: Epernay, France Chef de Cave: Damian Cambres - *(since April 2018) I have had the pleasure of visiting the home of Pol-Roger since 1993 - when I first met Christian Pol-Roger and we became good friends. So after a warm welcome from the team, we walked through their modern, fully renovated winery. We then explored their stunning 7kms of underground cellars, while talking through the past and upcoming vintage and harvest. Then it was time to work through a full tasting of their current range of Champagnes - starting with this cuvee, their highly respected Brut Réserve NV. I have been in the wine industry for 30 years, and this is what I call ‘Sophisticated Simplicity’ - sound confusing, well once you try it all will be revealed. This non-vintage Champagne - is arguably the hardest of all Champagne expressions to make, is a harmonious assemblage of 30 different crus and from several different vintages - or as we call it reserve wines. Pol Roger consistently craft a wine with such style and elegance that simply dances across your palate only touching down when are where needed. After the harvest and the first fermentation, the wine then undergoes a full malolactic-fermentation prior to the final blending. Secondary fermentation (the creation of the bubble) takes place in the bottle at an incredible 9.3°C in the deepest of Pol Roger underground cellars (at a depth of 33 metres below the street level) where the wine is kept until it undergoes remuage (riddling) by hand (yes, all by hand), now a rarity in Champagne.

    BURIED CHAMPAGNE FROM 1890S TESTED AND TASTED 21st October, 2019 by Patrick Schmitt We exclusively reveal the flavour and composition of a pair of 120 year-old bottles of Pol Roger Champagne that have spent more than a century buried in wet chalk after a cellar collapse in 1900. Picture credit: Edward Henderson As reported on Friday 11 October, db was present as the Champagne house of Pol Roger pulled the first corks from its extraordinary discovery: a set of in-tact bottles from the 1890s, which have been lost underground for more than a century. If you have missed our previous reports on this treasure-trove of historic fizz, Pol Roger lost as many as 1.5m bottles of Champagne – representing around half its stock at the time – after a period of heavy rain caused its underground cellars to cave in during the night on 23 February 1900, burying the fizz in wet chalk and clay. However, on 15 January 2018, while Pol Roger was beginning the process of building a new packaging facility above the site of the collapsed cellars, the Champagne producer discovered a void. Among large amounts of broken glass, over the course of several days of careful digging, Pol Roger found 23 in-tact bottles, which it removed, and sealed with wax. So what where they? While it’s difficult to give an exact vintage, the Champagne house believes that the bottles hail from harvests from 1887 to 1898, with the two that were opened in db’s presence likely to be from either 1897 or 98, because both wines contained no sugar, suggesting that they were either still wines, or, most likely, Champagnes that were undergoing secondary fermentation at the time of the cellar collapse – which would have meant that they yet to be disgorged and given a dosage (the addition of sugar and wine).
