Wine List to Celebrate the 130Th Anniversary of Our Family’S Involvement in the Douro, We Opened the VINUM Restaurant & Wine Bar at Our Graham’S Lodge in 2013 Welcome to the Vinum wine list To celebrate the 130th anniversary of our family’s involvement in the Douro, we opened the VINUM Restaurant & Wine Bar at our Graham’s lodge in 2013. By opening VINUM, in association with the Basque company SAGARDI that specializes in gastronomy at the very highest level, we intend to present visitors with ideal food pairings for our Douro wines and our Ports. The lodge which is home to VINUM, was built in 1890 and contains no less than 3,700 seasoned oak pipes (casks) full of our very finest Ports, together with the equivalent of a further 2,300 pipes in oak tonels and vats. In this lodge we mature Graham’s Six Grapes, Late Bottled Vintage, the Tawnies of 10, 20, 30 and 40 years of age and also a few casks of the rare ‘Colheita’ wines (Single Harvest Tawnies) such as the 1952 and the 1961. These Colheita wines have been ageing here in this lodge for many decades. Such wines are only bottled to commemorate special occasions such as HM Queen Elizabeth’s Diamond Jubilee and to celebrate the 50th Birthday of President Barack Obama of the United States. Within this lodge we have the Graham’s Vintage Port cellars, with bottles that date back to the very rare Graham’s 1896 Vintage Port and the great 1904 and 1908 Vintage Ports. These cellars contain our reserve stocks of virtually every Graham’s Vintage Port made throughout the 20th century, right up to our most recent "declaration". At VINUM you will be able to taste some of these wines as well as others produced with grapes grown on our family’s 28 "Quintas" (Vineyard estates), all of which are situated in the best areas of the beautiful Upper Douro valley. All the entrées, main courses and desserts are specially created to accompany these wines. In addition to the Port and Douro wines produced by the Symington family, this list also includes a careful selection of other wines. These wines are made by friends of the family from various regions around the world, and in particular from the Primum Familiae Vini, of which the Symingtons are proud members. At VINUM we strive to create wonderful food from all the best natural ingredients that can be produced in the North of Portugal, including of course, the Douro valley and from the clean and cold waters of the Atlantic Ocean. Paul Symington. Chairman, Symington Family Estates. THE WINES AT VINUM We begin with Douro wines, our home vineyards. We offer the wines produced by the Symington family, such as those from the legendary Quinta do Vesuvio, one of Portugal’s greatest vineyards. We also list the wines produced by Prats & Symington, a joint venture between the Symington family and the Prats, a renowned Bordeaux wine making family. Since 2000 this partnership have been making some of the Douro’s finest red wines, in particular Chryseia, the first Portuguese wine ever to be listed in the Wine Spectator’s top 100 wines of the world. The Altano wines are also listed, coming from the historic Quinta do Ataíde in the remote Vilariça valley. Most of Ataíde’s lovely vineyards were planted in the early 1980’s, so the vines are now some 30 year’s old and are producing wonderful fruit. We would like to highlight in particular the Altano Quinta de Ataíde ‘BIO’ wine made from organically farmed vineyards. This wine is typical of the New Douro wine style thatis achieving such success around the world. The wines from the Douro valley are produced from a wide selection of indigenous and traditional grape varieties. The Touriga Nacional and Touriga Franca stand out for their extraordinary quality, and are used in many of the red wines produced. The Douro is best known for its red wines which are normally deeply coloured, full-bodied, with firm ripe tannins and are the perfect accompaniment to game and red meat dishes. In recent years the white wines from the higher lying and cooler areas of the Douro have also been recognized for their wonderful quality. • In the second part of The Vinum Wine List we present the wines from other wine producing regions in Portugal and from around the world. This list has been organized to help you with your choice of wine. Since many of our visitors are from different parts of the world and possibly less familiar with Portugal’s numerous wine regions, we have decided to organize the Wine List according to the style of the wine as opposed to the region. We feel sure that by organizing the Wine List in this manner it will make your choice of wine easier when pairing with the dishes that you have ordered for your meal. However, all the members of the VINUM team are always available to help you to make the most appropriate choice. • In the third part of the Wine List we present our Ports and the wines of Madeira.     POL ROGER BRUT RÉSERVE NV Champagne Pol Roger was founded in 1849 and now owns 87 hectares of vineyards on prime sites in the Vallée d‘Epernay and the Côte des Blancs. Its cellars run for 7km and are on three levels, the deepest known as the ‘cave de prise de mousse‘ at 33m below ground. As the name suggests, this is where the wine undergoes secondary fermentation in bottle. The fact that this deep cellar is at 9°C or less, rather than a normal cellar temperature of 11-12°C, prolongs the fermentation and is a contributing factor to the quality and particular style of the wines and their famously fine bubbles. Pol Roger Brut Réserve is blended from 30 still base wines from different vineyards, different vintages and the three main grape varieties which dominate the champagne region: Pinot Noir contributes body, depth of character and life-extending tannins and comes from the villages of the Montagne de Reims – Verzy, Verzenay, Mailly, Ambonnay, Mardeuil and Louvois; Chardonnay provides the lightness, elegance and finesse and is drawn from Epernay itself and the villages of the Côte des Blancs – Cuis, Oiry, Oger, Vertus, Moussy and Chouilly; Pinot Meunier supplies youthful freshness, vigour and plump character with the grapes coming from the Vallée d’Epernay – Vincelles, Venteuil, Troissy, Damery, Vandières, Brugny, Chavot, Monthelon and Pierry.     TENUTA SAN GUIDO Guidalberto Toscana IGT 2016 REGION: Italy / Tuscany GRAPES: 60 % Cabernet Sauvignon 40 % Merlot Guidalberto is from the producers of the legendary Sassicaia. Grapes are harvested and transported to an independent cellar. Fermentation takes place separately for each variety in temperature-controlled steel vats before undergoing maceration. The wine is aged in French and American oak barrels and refined in bottle before release. HARVEST NOTE The 2016 vintage is considered one of the best of the last decade. The year began with a rather rainy winter and low temperatures toward the end of the season, especially in February when rains and cold temperatures were below the seasonal average. In mid-April the rise of the temperatures caused an early sprouting of the vines. The early spring was characterized by an alternation of rainy and sunny days with temperatures slightly below the seasonal average until mid-June, when summer finally arrived with temperatures above 88 ° F. Summer days were quite hot but never dry thanks to the strong ventilation during the day and the very positive climate excursion between days and nights. Thanks to these factors and to the good water supply of the soils, vines did not suffer any water stress. Grapes were well distributed on the plants with an homogeneous size of the berries. TASTING NOTE Ruby red limpid look, the aromatic range goes from red berries and spices to dark hints of tobacco and brushwood. Well-structured and with velvet tannins, this wine will evolve over the next few years. Fruity and fleshy with beautiful tannins, it’s a great everyday wine made almost exclusively from our Grand Prébois vineyards (for the Grenache) and our Vinsobres vineyards (for the Syrah). A beautiful wine you should always have around! THE VINTAGE This 2017 vintage will be remembered as the year of all records: the driest year in 30 years, non-interventionist vineyard work, optimal harvest conditions, a very small yield due to climatic hazards, and wines with very rich potential. DESCRIPTION "Côtes du Rhône par Excellence". Fruity and fleshy with beautiful tannins, its a great everyday wine. SITUATION This wine is a blend of Grenache (mainly from our Prébois vineyard in Orange), Syrah from further north (from our vineyard in Vinsobres) and Mourvèdre. TERROIR The vineyard of Prébois has clayey limestone soils covered with stones. In Vinsobres the terraces are rich in quartz and marl limestone. PROCESS The harvest date is determined by checking the ripeness of the grapes with analysis and tasting the berries. As soon as they arrive at the winery, the grapes are sorted and destemmed. The fermentation takes place in temperature controlled stainless steel tanks between 150hl and 190hl. The extraction is done by pumping over and the frequency is determined by tasting. After racking and malolactic fermentation, the wines are transferred partly to oak barrels and partly to stainless steel vats where they will be aged for a year. VARIETALS Grenache, Mourvèdre, Syrah TASTING NOTES Pretty deep colour. The nose offers a beautiful aromatic complexity, marked by Grenache and a hint of blackcurrant brought by the ripe Syrah.

    Coudoulet de Beaucastel Rouge 2009 LE VIN Les 30 hectares du vignoble de Coudoulet de Beaucastel se trouvent juste à l'est de celui de Beaucastel, de l'autre côté de l'autoroute A7. Pour des raisons qui deviendront évidentes, il est souvent considéré comme le bébé de Beaucastel. Quand on s'intéresse au sol de Coudoulet on s'aperçoit qu'il existe de nombreuses similitudes avec celui de Beaucastel. Il est composé de molasse marine de miocène recouvert par un diluvium alpin. Cette couverture de galets roulés contribue beaucoup aux vins de Beaucastel : elle emmagasine la chaleur intense du soleil méditerranéen pendant la journée et la restitue lentement aux vignes pendant la nuit. Cela permet un bon démarrage des vignes au printemps. LE MILLÉSIME Le millésime 2009 se caractérise par une belle structure et des tannins souples, un ensemble équilibré par une bonne acidité obtenue malgré les fortes températures du mois d’août, grâce à la relative fraîcheur des nuits et au travail racinaire. Des traits qui rappellent de grands millésimes tels que 2005 ou 2007, qui dégustés aujourd’hui révèlent de grands potentiels de garde.
