This means that everything in the universe is interconnected and mutually affects each other to varying degrees. Similarly, TCM treatments don’t focus on the condition of the patient’s body alone. They take into account such environmental factors as the patient’s lifestyle and diet. As such, a large part of the efficacy of TCM is due to the suggested lifestyle changes that not only prolong the effects of the treatment, but also improves the overall health of the patients and prevents them from having relapses and/or contracting other diseases. Dietary therapy or medicated diet is perhaps the most effective and most commonly suggested by TCM practitioners. As the name suggests, medicated diet involves treating and preventing diseases by making changes in one’s diet. A TCM practitioner will suggest certain foods to eat while other foods to avoid based on each individual’s body condition. In addition, Chinese medicinal herbs are often incorporated into the daily diet to further enhance the effect of the dietary changes. This recipe book is a compilation of over 100 recipes that incorporate certain foods and herbs to treat and prevent a multitude of diseases.

(Received: May 6, 2004; Accepted: December 15, 2004) ABSTRACT This work was conducted to investigate the quality of lipids in various commercial egg products. Lipids of egg yolk were extracted from fresh egg, Pidan (preserved egg), tea egg, simmered egg, iron egg (deeply simmered and dried egg) and salted egg by Folch reagent, a mixture of chloroform and methanol at 2:1 volume ratio. The extracts and commercial yolk oil were analyzed to determine lipid profile, fatty acid composition, thiobarbituric acid value (TBA value), acid value and peroxide value. Results showed that the quality of yolk lipids was quite different. The lipid content ranged from 27% for Pidan to 46% for iron egg. Phospholipid content was highest in fresh egg (about 351 mg/g oil), while lowest in Pidan (about 175 mg/g oil). Cholesterol content of fresh egg yolk oil was the highest, about 38 mg/g oil, while the Pidan yolk oil contained the least cholesterol (28.51 mg/g oil).

    Survey on Popular Food Items: Street Snacks Centre for Food Safety Food and Environmental Hygiene Department July 2008 Background Street snacks is a distinguishing feature of Hong Kong. Everyday, many street vendors are manufacturing various kinds of food and attracting many people to eat frequently. Therefore, the safety of these foods is all along an issue of concern. In view of this, the Centre for Food Safety (CFS) recently conducted a project on street snacks as the latest theme of “Survey on Popular Food Items” to assess their safety. Tests include microbiological testing and chemical analysis. 1 Testing items Microbiological testing Include pathogens such as Bacillus cereus, Salmonella, Staphylococcus aureus and Vibrio parahaemolyticus. Street snacks may associate with unsatisfactory hygiene conditions because: Storage of raw and cooked food in the small sized food premises can easily cause cross contamination Large serving volume by using simple cooking utensils may lead to inadequate cooking of food Hot environment allows rapid bacterial growth 2 Testing items (cont’d) Chemical analysis Street snacks may not be made from fresh raw materials. Hence, colouring matters are commonly applied to them to make them more colourful and attractive, e.g., pork intestine, fruit juice, vegetarian food, curry sauce and egg products, etc. Therefore, colouring matters (including Sudan dyes) is one of the major testing parameters in this project. CFS also collected vegetable samples for testing of pesticide residues. 3 Testing items (cont’d) Chemical analysis Include aflatoxin in frying oil and its quality. Certain types of plant oil such as peanut oil may be contaminated by naturally occurring aflatoxin.
