WHAT THE HECK IS GOETTA?

Goetta is a of likely German-American origin that is popular in the Greater Cincinnati area. It is primarily composed of (, or pork and ) and steel-cut . Pronounced gétt-aa, ged-da or get-uh Americanized pronunciation, this dish probably originated with German settlers from the northwestern regions of Oldenburg, Hannover, and Westphalia who emigrated to the Cincinnati area in the 19th century. The word "Goetta" comes from the Low German word götte. However, some believe that goetta originated as a substitute, brought to Ohio via Scots-Irish migrants by way of Kentucky. Goetta was originally a peasant dish, meant to stretch out servings of meat over several meals to conserve money. The modern popularity of goetta in Cincinnati has led to it being called "Cincinnati Caviar". Glier's Goetta, the largest commercial producer of goetta, produces more than 1,000,000 lb. annually, around 99% of which is consumed locally in greater Cincinnati.

HOW DO I MAKE GOETTA?

For those of you who enjoyed this Cincinnati breakfast treat here is Larry’s secret slow cooker recipe. 1 lb. ground beef 1 large onion sliced 1 lb. Tennessee Pride Sage sausage 3 bay leaves 6 cups of pork broth3 teaspoons of & a pinch of pepper 2 1/2 cups of pinhead oatmeal1/4 lb fatty pork loin

Prepare broth by combining 6 1/2 cups water, 1/4 lb fatty pork loin, salt, pepper, onion and bay leaves. Bring to a boil then let simmer for 20 minutes. Strain the broth placing in a slow cooker with the 2 1/2 cups of pinhead oats. Stir, cover and cook on high for 1 1/2 hour. Mix ground beef and pork sausage well in a bowl then add to the oatmeal mix in the slow cooker. Stir well, cover and cook on low for 3 hours. The mixture should be thick enough to form into patties. Uncover, if not thick enough and cook a little longer, stirring often.

Line several loaf pans with wax paper, place the mixture into the pans to form loafs. Pat the goetta to get a tight consistency then refrigerate. When ready to serve simply slice and fry until golden brown in the skillet. Genießen Sie! KENTUCKY UNIT WBCCIOCTOBER 11, 2011
