The enzyme is obtainable from natural sources id, forms kojibiose and an inorganic phosphoric acid such as microorganisms of the genus Thermoanaerobi- from p-D-glucose-1 -phosphoric acid, and catalyzes the um, and obtainable by recombinant technology.
