To create this menu, Executive Chef Manuel Hewitt and Wine Director Sarah Trubnick spent two and a half weeks studying and touring the regions presented. Meeting and learning from influential chefs and wine- makers, along with culinary experts, throughout the Swiss, Italian, French, and Austrian Alps aided them in presenting a menu that is as true to local traditions as possible.

Though it is a relatively small region, Portugal offers an incredible array of culinary and oenological flavors and styles from Vinho Verde in the north to the Algarve in the south. This country has had a diverse set of culinary influences throughout history, from earthy, simple Celtic dishes to exotically spiced, vibrantly aromatic Moorish recipes.
