1 Molino e Pastificio Poiatti Spa: una storia ”inimitabile, dal 1946” La storia di Poiatti è la storia della pasta in Sicilia. Una testimonianza del geografo arabo Al Idrisi, intorno all’anno mille, racconta che nella nostra isola si produceva un “cibo di farina in forma di fila”. Ecco la prima definizione moderna di pasta. Mazara del Vallo fu la porta di ingresso per la scoperta della Sicilia e della sua pasta da parte degli arabi. Facciamo un salto di alcuni secoli. Domenico Poiatti, proprietario di antichi molini, in un periodo molto difficile per l’Italia, subito dopo la II guerra mondiale ebbe l’intuizione di creare un piccolo pastificio a Mazara del Vallo. Era il 1946: oggi, quella tradizione continua grazie ai figli e ai nipoti che hanno ereditato dal padre e dal nonno la passione per la pasta. La Poiatti, “inimitabile dal 1946”, oggi produce e commercializza più di 100 formati diversi di pasta: semola di grano duro, semola integrale e adesso anche la Bio. ZONE DI PRODUZIONE DEL GRANO GRAIN PRODUCTION ZONES “Qualità”, che parola abusata. Tutti la cercano, in tanti se ne vantano. Pochi la fanno real- mente. Poiatti non produce semplicemente una pasta di qualità. Poiatti é la pasta di qualità. La qualità per noi è nelle cose, nel nostro modo di essere, nella nostra storia, in ogni singola scelta che facciamo, dal campo alla tavola. Se ci fate caso, “fare” la pasta non è altro che una lunga sequenza di gesti semplici: la raccolta del grano, la molitura, la lavorazione di semola e acqua. E forse il segreto di Poiatti è proprio il modo in cui manteniamo incontaminata questa semplicità, che richiede tempo, passione, dedizione. Tutto questo non nasce dal caso, ma è frutto dell’esperienza di coltivatori, mugnai, pastai tecnici specializzati, veri e propri artigiani della pasta. LA LAVORAZIONE Altri comprano la semola di grano già pronta. Noi invece lavoriamo e maciniamo il grano con la stessa passione che mettiamo dal 1946: la pasta la sappiamo fare.
