WHISKEY / WHISKY { Wis- Kee} Noun “WHISKEY” (OR WHISKY) IS an ALCOHOLIC DISTILLATE MADE from a MASH of FERMENTED GRAIN WHISKEY / WHISKY { wis- kee} Noun “WHISKEY” (OR WHISKY) IS AN ALCOHOLIC DISTILLATE MADE FROM A MASH OF FERMENTED GRAIN. THE SPELLING OF THE WORD DEPENDS ON THE LOCATION WHERE THE SPIRIT ORIGINATES. WHILE THE SCOTS SPELL THE SPIRIT ‘WHISKY’ MOST OTHER NATIONS CALL IT ‘WHISKEY’. THE CATEGORY OF WHISKEY ITSELF IS VERY BROAD, AND IS IN FACT THE LARGEST GROWING SPIRIT CATEGORY IN THE WORLD. WHISKEY IS BEING PRODUCED ALL OVER THE WORLD, AND SO DIFFERS IN TYPE BASED ON THE GRAIN USED AND THE LOCATION IN WHICH IT WAS DISTILLED, AS WELL AS THE LENGTH OF AGEING AND THE TYPE OF OAK BARREL USED IN THE AGEING PROCESS. ALL WHISKEY MUST BE DISTILLED AT LESS THAN 190 PROOF (95% ABV) AND BOTTLED AT NO LESS THAN 80 PROOF (40% ABV). IT MUST POSSESS THE “TASTE, AROMA AND CHARACTERISTICS GENERALLY ATTRIBUTED TO WHISKEY”, ACCORDING TO THE DEFINITION PROVIDED BY THE ALCOHOL AND TOBACCO TAX AND TRADE BUREAU OF THE UNITED STATES. WHILE THERE ARE NO RESTRICTIONS ON WHICH TYPES OF GRAIN CAN BE USED TO CREATE A WHISKEY, THERE ARE RULES PERTAINING TO THE LABELLING OF A WHISKEY DEPENDING ON THE MASH BILL USED. FOR EXAMPLE; • BOURBON WHISKEY MUST BE MADE FROM A MINIMUM OF 51% CORN. • RYE WHISKEY MUST BE MADE FROM A MINIMUM OF 51% RYE GRAIN. • CORN WHISKEY MUST BE MADE FROM A MINIMUM OF 80% CORN. • WHEAT WHISKEY MUST BE MADE FROM A MINIMUM OF 51% WHEAT. • AMERICAN MALT WHISKEY MUST BE MADE FROM A MINIMUM OF 51% MALTED BARLEY. • A SINGLE MALT SCOTCH MUST BE MADE FROM 100% MALTED BARLEY, AND BE DISTILLED IN A POT STILL BY A SINGLE DISTILLERY. ONCE DISTILLED, ALL WHISKEY IS AGED IN OAK BARRELS. DEPENDING ON THE LOCATION OF THE WHISKEY PRODUCER, THE OAK MAY VARY. BOURBON IS AGED IN AMERICAN OAK BARRELS, WHILE SCOTCH IS SOMETIMES AGED IN EUROPEAN OAK. THE BARRELS CAN BE EITHER TOASTED, WHICH IS MAINLY A EUROPEAN METHOD, OR CHARRED. MOST WHISKEY PRODUCERS IN THE UNITED STATES WILL CHAR THEIR BARRELS. FROM THIS OAK, THE WHISKEY WILL INHERIT FLAVOR, COLOUR AND AROMAS. ONCE THE WHISKEY IS BARRELED, IT WILL BE STORED AND AGED IN A “RICKHOUSE”, UNTIL A TIME AT WHICH THE MASTER BLENDER IS SATISFIED WITH THE WHISKEY AND THE BOTTLING PROCESS BEGINS. FACTORS SUCH AS THE POSITION OF THE BARREL WITHIN THE RICKHOUSE AND THE TEMPERATURE OF THE RICKHOUSE WILL AFFECT THE WHISKEY, AND THOSE PLACED AT THE TOP OF A RICKHOUSE WILL AGE AT AN ACCELERATED PACE, WHILE THOSE AT THE BOTTOM LEVELS OF THE RICKHOUSE WILL MATURE AT A SLOWER RATE. EACH DISTILLERY HAS A MASTER BLENDER WHO OVERSEES THE WHISKEY FROM THE INITIAL DISTILLATION THROUGH THE AGEING PROCESS AND THEN TO THE BOTTLING OF THEIR WHISKEY. 1 BOURBON BOURBON WHISKEY IS ONE OF THE MOST COMMONLY RECOGNIZED CATEGORIES OF WHISKEY. ACCORDING TO THE TOBACCO TAX AND TRADE BUREAU (TTB), ANY SPIRIT LABELLED AS A BOURBON; • MUST BE PRODUCED WITHIN THE UNITED STATES OF AMERICA • MUST BE DISTILLED FROM A FERMENTED MASH OF A MINIMUM OF 51% CORN • MAY NOT BE DISTILLED HIGHER THAN 160 PROOF (80% ABV)• • MUST BE ENTERED INTO THE BARREL AT NO HIGHER THAN 125 PROOF (62.5% ABV) IN CHARRED NEW OAK BARRELS WHILE THERE IS NO PARTICULAR RULE HOW LONG A BOURBON MUST STAY INSIDE THE BARREL FOR AGEING, THE LABEL MUST STATE THE AGE IF IT IS AGED FOR LESS THAN 4 YEARS. John David Willett was the Master Distiller and part owner of Moore, Willett & Frenke Distillery in Bardstown, KY. John David’s son Lambert Willett walked 5 miles each way to his distilling job at the current site of Barton’s. It wasn’t until Lambert began working at the Bernhiem Distillery in Louisville that he purchased a car for his commute so he could come home to his family every night. Lambert worked 6 days a week for nearly a decade at Bernhiem. During prohibition Lambert raised cattle and hogs to support his family and community. The effects of prohibition were devastating to the Bourbon Capital of the World®. Immediately following the repeal of prohibition in December of 1933, Lambert’s son Thompson began learning the distilling trade apprenticing alongside his father at the age of 25. Est. 1936. I have always considered November 21 as my birthday. In fact, that date is on my discharge certificate from the U.S. Army. My birth certificate, however, states I arrived at 5 p.m., on the 20th which was on a cold Tuesday. The temperature was around 10 degrees below zero, according to my Uncle Floyd Huddleston, who I’m told had a photographic memory,” Denny explained. “My Great Uncle Jessie Huddleston told me many times it was the coldest winter he had ever experienced. According to my father Hugh Toi Denny, the weather turned cold around November 3. It started snowing , but the temperature was so low there wasn’t much accumulation. All that fell remained on the ground. It snowed off and on all of November, and up through December. Several of the old timers from Rock Spring (the community where I was born) said the snow didn’t melt until sometime in early spring. In the far reaches on North Hill some snow could be seen as late as April 10. Mr. Earl McCallum, also told me the Tennessee River froze over throughout southern Tennessee and northern Alabama.
