Hatch Chile and

Salsa Ingredients: • 1 large , diced • 1 Tbsp chopped roasted Hatch Chiles • 2 Tbsp finely chopped red • 1 tsp juice, freshly squeezed • 1 tsp fresh cilantro • 1 tsp salt Salsa Instructions: 1. Scoop diced tomatoes into a bowl. 2. Add finely chopped red onion, fresh cilantro, chopped roasted Hatch Chiles, freshly squeezed lime juice, and salt. 3. Stir all ingredients in the bowl until well mixed. 4. Refrigerate until ready to serve.

Guacamole Ingredients: • 1 jumbo avocado, ripe • 1 tsp cilantro (skin and pit removed) • 1 Tbsp chopped roasted • 1 , diced Hatch Chiles • 1 Tbsp finely chopped • 1 tsp lime juice red onion • 1 tsp salt Guacamole Instructions: 1. Place avocado in a bowl and carefully slice into small pieces with a plastic knife. 2. Use a fork to mash and stir the avocado pieces in the bowl until desired consistency is reached. It can be left more chunky or mashed longer to make more smooth. 3. Add diced tomatoes, finely chopped red onion, fresh cilantro, chopped roasted Hatch Chiles, lime juice, and salt. 4. Stir all ingredients together until well mixed. 5. Refrigerate until ready to serve. Enjoy with tortilla chips or for a healthier snacking option, try bean or lentil chips! Salsa on front.
