President’s message In This Issue It is my great honor and pleasure to be addressing you as President of LLAEOP. I have chosen “Through Your Example, Shine a Light” as my theme for the next two years, and am looking forward to embarking Announcements………………..6 with all of you on a journey of many, many lights! LLAEOP Professional Spotlight...3 The officers established a proposed budget for 2016-2017, and it is included in the newsletter. I’m really excited about a new budget line item for this year. We have included $100 to develop Membership Drive………………6 a website for LLAEOP. Stephanie Nallo, 2nd VP from Lancaster CTC, has volunteered to undertake this task, and the $100 will be used to purchase a website name. Office Professional Resources….4 The budget was presented to key people at a meeting on August 17, and you will be asked to Scholarship Update…..…………6 vote to approve the budget at the October meeting. The picnic continued with a Chinese Auction of hand made items donated by LLAEOP members. There were so June 15, 2016 LLAEOP End of Year Meeting many beautiful and creative items donated by Contributed by Ann Naylor, Annville-Cleona our members! We certainly have a talented group! Members bought tickets for $1.00 each and all proceeds were donated to Camp Can The annual end-of-year picnic was held once again at Lititz Springs Do at Gretna Glen. The camp provides Park on Wednesday, June 15. The weather was beautiful and we camping experiences for children with cancer had a great time! 92 members enjoyed a dinner of chicken and their siblings. A check in the amount of parmesan and baked penne pasta. $452 was sent to Camp Can Do!

After dinner, Lisa Bates presided over the Installation of Officers The evening ended on an exciting note, with a drawing ceremony. The following officers were installed for a two-year for two $100 money trees. The trees were beautifully term: Ann Naylor - President , Janice Boyer – 1st Vice-President, crafted by Sherry Zimmerman, Annville-Cleona SD. Simple Microsoft Office Tips that will make you More Productive

One of the best features of PDFs are that they are not 1 editable as a default. It’s also an irksome feature if you want to take information out of it. Use the PDF Reflow feature in MS Word 2013. Making it uncomplicated – open a PDF with Word 2013 and it will behave like a normal Word document. Word creates a copy and opens it as a normal document as you would

any other from File – Open. Make any changes…the original PDF is left intact. The conversions are not always perfect, but this is a very handy feature.

HealthY Snacks for Energy to Get You through the Day!

Black Eyed Pea Dip Contributed by Zita Angelo, Lancaster-Lebanon IU13 Dark Chocolate Bark Contributed by Justin Johnson, ELANCO Ingredients: • 15 oz. canned no salt black eye peas Ingredients: • 2 cloves garlic, crushed or minced • 1 - 12 oz. bag of dark chocolate (any kind) • 3 tbsp. fresh lime juice (from about 1 1/2 limes) • 1/2 cup of nuts • 1 tbsp. extra virgin olive • 1 multigrain rice cake (broken into pieces) • 1 tsp cumin • 1/2 cup of oatmeal • pinch crushed red pepper flakes • 1 tbsp. of ground flax seed • 1/2 tsp kosher salt • 1 cup of dried cranberries • 1 cup cooked corn, fresh or frozen, thawed • 1 cup cherry tomatoes, quartered Directions: • 1/4 cup minced red onion, finely diced Line a baking sheet with parchment or wax paper. In a glass • 1/4 cup cilantro, chopped bowl, heat two-thirds of the chocolate in a microwave oven • 1 jalapeno, seeded and diced (optional) at high power in 30-second bursts until just melted. Stir • 1 medium avocado, diced until smooth. Add the remaining chocolate and stir until melted.
