    NEW TECHNOLOGIES ON THE PRODUCTION OF VIRGIN COCONUT OIL AND THEIR APPLICABILITY TO INTEGRATED COCONUT PROCESSING MODULES Divina Bawalan* Abstract The increasing number of published books, literatures, results of medical researches and internet information extolling the beneficial effects of coconut oil to the human body led to the development of a “niche” and very high value market for a special type of coconut oil which is processed differently from the traditionally known refined, bleached and deodorized (RBD) coconut oil. From a much maligned substance in the 80’s which has been claimed by American Soybean Association as causing heart disease and atherosclerosis, this high quality version of coconut oil which is now generally referred to as virgin coconut oil has resurrected its reputation and made a dramatic turn-around in the world market as a functional food that not only nourishes but also heals. Dubbed as the ‘healthiest oil on earth”, virgin coconut oil (VCO) is processed from the fresh and mature kernel of the coconut and its derivatives coconut milk and coconut milk residue. The paper presents salient information on the 8 different processes for producing VCO (4 from fresh kernel, 3 from coconut milk and 1 process from coconut milk residue), the advantages and disadvantages of each process, the quality control requirements and critical control points to be followed to insure the production of high quality VCO, the applicable scale of operation for each process and the required machineries and equipment. The sensory evaluation attributes to assess the quality of VCO in the absence of laboratory analysis are also discussed.

    Beatriz Dykes, PhD, RD, LD, FADA Background The Philippines is an archipelago (chain of islands) comprised of over 7,100 islands in the western Pacific Ocean. Originally inhabited by indigenous tribes such as the Negroid Aetas and the pro-Malays. Beginning in 300 BC up to 1500 AD, massive waves of Malays (from Malaysia, Sumatra, Singapore, Brunei, Burma, and Thailand) immigrated to the islands. Arab, Hindu and Chinese trading also led to permanent settlements during by these different groups during this period. In 1521, Spain colonized the Philippines, naming it after King Phillip II and bringing Christianity with them. The Spanish colonization which lasted 350 years, imparted a sense of identification with Western culture that formed an enduring part of the Philippine consciousness, unmatched anywhere else in Asia. The prevalence of Spanish names to this day (common first names like Ana, Beatriz, Consuelo, Maria and last names as Gonzales, Reyes, and Santos) reflects this long-standing influence of the Spanish culture. The United States acquired the Philippines from Spain for 20 million dollars after winning the Spanish-American war through the Treaty of Paris in 1898, introducing public education for the first time. During this period, health care, sanitation, road building, and a growing economy led to a higher standard of living among Filipinos and the Philippines became the third largest English speaking country in the world. Above all, the US occupation provided a basis for a democratic form of government. World War II had the Filipinos fighting alongside the Americans against the Japanese. The Death March and Corregidor became symbolic of the Philippine alliance with the United States.

This study evaluated the effects of elevated temperature storage (i.e., 35 °C, 40 °C, and 45 °C) on the aroma of three differently processed (i.e., fermented, centrifuged, and expeller-pressed) VCO. Stored samples were evaluated by eight (8) trained panelists at various sampling days, based on a Q10 of 2 for hydrolytic rancidity. Freshly prepared fermented and centrifuged VCO samples had predominantly acid and nutty aro- mas, respectively. Expeller-pressed VCO was perceived to have latik (aroma associated with cooked sweet, coagulated coconut milk) notes. Changes in the distinguishing aroma characteristic of each VCO sample exhibited polynomial behavior during storage in all elevated temperatures.

Soewignyo Staff Pengajar Fakultas Ekonomi Universitas Klabat This paper primarily aimed to compare coconut industry in Silang, Cavite Province, Philippines and North Minahasa, North Sulawesi Province, Indonesia to enhance the livelihood and local income. The study was conducted from July to August 2008 in Silang rural areas and North Minahasa rural areas using descriptive survey method and the research data originated from the collection and analysis of primary and secondary data. The results generally indicate that income generating from coconut farming currently very low. Coconut farmers in Silang produce young coconut while in North Minahasa copra and old coconut. There is no value added created from the coconut trees. To increase income of coconut plantation farmers in Silang practice intercropping and livestock while in North Minahasa intercropping only.
