Social life and occupational activities of the different ethnic groups formed the two main spines of how different the inhabitants’ garments would be. This study developed and demonstrated a step-by-step conceptual framework of narrative analysis. Mushroom Basics By Dan Gill, Ethno-Gastronomist Photos compliments of “Wildman” Steve Brill http://www.wildmanstevebrill.com The Good White Morel Morchella deliciosa I was working in the woods on a fine spring day several years ago, when I thought I smelled mushrooms. Looking around the mixed hardwood stand dominated by Tulip Poplars, I noticed a lot of Sweetgum balls. When I looked closer, I realized that many were actually morel mushrooms in camouflage. Once my eyes and brain adapted to the difference, I realized that I was surrounded by a stealthy delicacy, some six inches high. I ran for some brown paper bags and picked several pounds. Though I have found edible mushrooms in every month of the year, the season really begins, at least psychologically, in early spring with the emergence of morels, or “merkles” as they are known by many mushroomers. Start looking around apple blossom time when wild asparagus and May Apples are up and oak leaves are the size of squirrel’s ears, or about mid April. Morels are sometimes found in unusual places, such as mulch piles and lawns (especially near elm trees), but they often inhabit old apple orchards, Tulip Poplar stands and burned over woodlands. If you find more than you can use right away, call me – I will even help you pick them! Otherwise dry them. Morel flavor actually intensifies with drying. There are many excellent edibles, besides morels, that grow in abundance throughout Virginia and are easily identified, once you know what to look for. The differences and points of distinction are characteristic and quite obvious: Is the cap of a certain color, texture or feel? Does it have gills, pores or spikes underneath? What color are the gills and spore print? Does it grow on the ground or on trees, in the woods or on lawns? Once you have seen, touched, smelled and tasted a specific mushroom, it is like telling the difference between an apple and a tomato. -

Green Curry Paste
GREEN THAI CURRY PASTE INGREDIENTS Makes 1 ½ cups • 1 tablespoon coriander seeds • 1 teaspoon cumin seeds • 1 teaspoon white pepper corns • 9 cloves garlic (pressed or finely chopped) • One 8cm piece galangal or ginger • 2 Shallots or one red onion • 2 cup of fresh coriander root (and leaves if you wish) • 4 tablespoon shrimp paste • Juice and zest of 2 medium limes • 6 green chilies- seeded, one or 2 red chilies • 1 stick lemongrass (minced or finely chopped) • ½ cup Vietnamese mint, 2 kaffir lime leaves • 1 ½ teaspoon grated palm sugar/ brown sugar www.tasteofthetopend.com City of Darwin GREEN THAI CURRY PASTE WHAT TO DO • Toast the coriander and cumin seeds in a dry frying pan for a few minutes until fragrant. • Grind these spices with the peppercorns in a large mortar and pestle • Chop the chilies (without seeds), lemon grass, coriander roots, Vietnamese mint (without stems) and kaffir lime leaves and dice the shallots. • Grate the garlic and ginger or galangal and zest the limes • Add in these ingredients in batches and crush in the mortar and pestle until smooth with the shrimp paste and palm grated palm sugar • Now squeeze in the lime juice • This smooth paste can be used in all Green curry recipes- Nearly all of these ingredients can be grown all year in the Darwin region and makes an amazing base to Thai style curries. The paste can be kept in the fridge for a couple of weeks or frozen. If you don’t have a mortar and pestle, you can use a hand whizzer or blender. -

Here are a few tips to help guide you through a successful transition off ProLon. Remember when introducing food back into your system, you want to keep it light and mostly consume plant-based foods. Keep these tips in mind when deciding what to eat: ✤ Limit fruits that are high in sugar – keep sugar lower than 10g per day ✤ Limit sugary drinks, refined pasta or bread, and white rice ✤ Limit meat, fish, cheese, and other animal products – if you’re going to eat animal products, then choose low-mercury fish ✤ Try to eat an assortment of vegetables ✤ Choose unsweetened coconut or almond milk over milk from animals ✤ Choose unsaturated fats (olive oil, nuts, avocados) over saturated fats (butter, lard, fatty pieces of meat, fried foods, some baked goods) The below recipes and ingredients are just suggestions. The name (directly translated to ‘Fatty Rice’) derives from the rich flavours of the rice, which is infused in coconut milk and pandan. ● The rice is served with condiments such as a spicy sambal, deep fried anchovies and peanuts, plus slices of raw cucumbers and boiled eggs.
