    Charles Melton, `Grains of Paradise` Barossa Valley Shiraz 2016 Barossa Valley, South Australia, Australia PRODUCER Charles Melton Wines has produced premium Barossa red wines since 1984. At that time, Charlie and a small band of Barossan winemakers turned their winemaking efforts to what were then considered a couple of unfashionable varieties: Shiraz and Grenache. These wines were initially styled on those from the Rhône but are now considered leading examples of the varieties in their own right. VINEYARDS Shiraz grapes for the 'Grains of Paradise' come from the finest vineyard sites in the Barossa. For the 2016 vintage, much of the fruit was sourced from Charlie's 12 hectare Kirche vineyard in Krondorf. Relatively youthful at 40 years old, this vineyard produces some of the highest quality Cabernet grown in the Barossa, along with superb Shiraz. Most of the vineyard sits on loam and red clay, with the edge on the eastern side heading into the seam of black cracking clay (Bay of Biscay). So named because it surrounds the Zum Kripplen Christi Lutheran Church, built in 1864. VINTAGE Winter had lower rainfall than normal and these dry conditions carried on through to summer. This led to low bunch numbers and smaller berries which reduced yields but also resulted in more concentrated flavour and deeper colours. Above average temperatures led to earlier flowering, veraison and harvest. Vintage began the first week of February and was relatively compressed due to the ongoing warm weather. VINIFICATION The grapes were destemmed only and fermented at temperatures between 18-23°C with daily pump-overs.

The vineyard cyber monitoring system known as Project Boundary Rider has been designed by Canadian company Be Seen Be Safe to keep South Australia’s $1.78 billion wine industry free of devastating pests and diseases such as phylloxera and Pierce’s disease. Vinehealth Australia, based in South Australia’s capital of Adelaide, is overseeing the project and has begun a six-month trial at 30 vineyards in the renowned Barossa Valley and McLaren Vale wine regions. It will include the busy vintage period, which runs from February to April, when vineyards and wineries are susceptible to pests and disease partly due to high traffic volumes in and out of properties. The Boundary Rider app places a virtual fence around vineyards, tracking the movements of people across boundaries via GPS on a smartphone. Movements are recorded in real-time, with vignerons benefiting from an up-to-date electronic visitor record of anyone with a smartphone who has moved across their geofences. In the event of a pest or disease outbreak, the technology provides instant data to enable a rapid response to contain the spread and minimise loss. Vinehealth Australia Technical Manager Suzanne McLoughlin said while it was still early days for the project, initial feedback from users had been positive.

    Welcome to Dandelion. Our menu features a very personal showcase of dishes inspired by the Cuisine of Vietnam. A rich and diverse cuisine that exhibits a wonderfully intoxicating combination of the raw and the cooked, the hot and the cold, the sweet and sour. The Vietnamese are known for their philosophical balancing of the five elements, wood, fire, earth, metal and water. Vietnamese dishes include five fundamental taste senses, sour, bitter, sweet, spicy and salty. You will see this principal and sensitivity reflected throughout our menu and Wine List. These dishes cry out for very specific wines and with our Wine List we have selected a short catalogue of gems that we believe will best showcase the food. This is not a ‘greatest hits’ wine list with hundreds of entries that cover all flavors and intensities. This wine list is focused very closely on the food at Dandelion. Vietnamese food is strongly influenced by the food of China, India and the Khmer, as well as the myriad of sea-going traders that have graced its serpentine coastline. Rather uniquely this fusion of cuisines has then been judiciously molded and refined by the French, resulting what we believe is the most elegant, distinct and certainly most WINE FRIENDLY of all the Asian cuisines. You will notice a distinct lack of big, blousy, overly worked whites and heavily tannic reds, we believe these styles are too boisterous for our food. Instead we are strong on fragrant whites, fruit driven reds and even perhaps undervalued wine varietals from regions new and old. Ultimately the list is full of highly compatible wines, where in combination enhance both the food and the wine experience.
