Kashrut is derived from the Hebrew root Kaf-Shin-Reish, defined as "fit, proper or correct." The standard is also commonly known as kosher. Non-kosher food is known as treif, which originally referred to non-kosher meat only but now applies to all foods not prepared according to Jewish dietary laws. It is necessary for milk (milchig) and meat (fleishig) products to be kept completely separate in a kosher kitchen.
